About this Cook
I'm currently a grad student and recently made some huge changes in my diet. Now I eat a lot healthier and eat a lot more whole-food type things. I'm not a health nut or a whole foods fanatic, but I do think good food is worth the little extra bit of money/ time. What's more important than what your body runs on?
My favorite things to cook
I LOVE Mexican food. I really enjoy using my slow cooker cause I'm super busy with school and work and etc. I like to try to cook anything once.
My favorite family cooking traditions
nothing really too special here. My mom always made dinner and we always all ate as a family, that was nice.
My cooking triumphs
Just recently had my first dinner party with like 10 people and it went great! We had three courses (easy ones) but I'd say I did pretty well for the first time (and for the fact that I did it in a TINY kitchen.
My cooking tragedies
recently I tried to make a cherry angelfood cake, i was so excited to try it when it came out and as soon as it came out, it fell, just like that. (i still ate some of it though.. shh)

Butternut Squash Casserole
changes I made: I didn't make the glaze, it was very sweep already. Used 2/3 cup splenda instead of sugar and 4 egg whites instead of 3 whole eggs. If I would have put the glaze on this, I really would serve it for dessert.

Cantaloupe Frenzy
this is good! i added a little club soda to thin it out a little. very refreshing.

Zesty Chicken Meatloaf
Was a little dry, served it with salsa instead of cheese to cut down on the fat a bit. Tasted good, maybe next time I will decrease the amount of bread crumbs a little or add more ranch dressing to add more liquid.
