Super Simple Shrimp Pasta

Update - have tried different ways and found it is best to add fresh peeled and deveined shrimp to pasta a few minutes before the pasta is done, rather than use the thawed cocktail shrimp. The shrimp is much better this way!

INCREDIBLE Raspberry Cheesecake Cookies

What a great recipe! Everyone loves them. I also had to get the chips online, but they were worth the expense. I can't wait to try these with blueberry and strawberry chips, but my favorite will always be the raspberry!

Zucchini Brownies

Great brownies. I agree with previous post - let the batter sit for a few minutes after adding the zucchini and it will have much more moisture. The frosting is great also.

Cheese Babka

This was a beautiful bread. The top side was even more gorgeous than the bundt side. The dough was very sticky - I had to add another cup of flour before and at least one cup during the kneading process (almost 2 more cups than recipe called for). I also had to sub cream cheese for farmer's cheese - my store just didn't have it. The dough was tender and soft and sweet and wonderful. And the house smelled fabulous as well. Great recipe. Will make again.

Pepperoni Crisps

We make these in the microwave all the time. Place the pepperoni on paper towels on top of a paper plate for just a few seconds. The paper towels soak up all the grease. The kids love these.

Mom's Best Peanut Brittle

Very easy and very good brittle. Please use a good heavy bottomed saucepan - it heats much better. I used to wonder why it took so long for the temperature to reach 300 degrees when I used the old wobbly pan I had before buying a good one!

Apple Crisp Cups

White Cheese Chicken Lasagna

Rhubarb Cheesecake

I brought one of these to my Mom's for Mother's Day and it was a huge hit - just delicious! The only thing I did differently was to add about 2 teaspoons of lemon juice to the cheesecake batter (I always add lemon to plain cheesecake). Thanks so much for this fabulous recipe!

Mini Pineapple Upside-Down Cakes

Very cute and very easy. We have a few diabetics in our family, so I used the Splenda brown sugar blend and Pillsbury reduced sugar yellow cake mix. No one could tell the difference. Great recipe!

Texas Caviar with Avocado

I made this for a carry-in at work and everyone loved it. I added 2 tbsp fresh cilantro and a few sliced green onions I had on hand as well as a sweet red onion. Perfect for this time of year when the tomatoes are fresh!

Zucchini Egg Bake

I made this for a breakfast carry-in at work this morning - everyone loved it. I doubled the recipe and used half butter and half olive oil to saute the veggies. The garlic gave it a nice kick. Thanks for the recipe!

Mom's Zucchini Bread

Chocolate Cappuccino Cheesecake

Awesome dessert! I used chocolate filled oreos for the crust (no sugar necessary) and sprinkled a few more crumbs on top after it chilled - looked great and tasted great! I also used half sugar and half Splenda - nobody knew the difference! Very rich and decadent. Thanks for a wonderful recipe.

Crustless Cranberry Pie

What a great surprise! I had a bag of fresh cranberries left from Thanksgiving and thought I would try this easy recipe - am I ever glad I did. The kids even enjoyed it warm from the oven with some fresh whipped cream. Very tasty!

I tried a very similar recipe years ago and the meatballs did not taste good until they had simmered in a crockpot on low for several hours, giving the flavors a chance to "marry". Let them hang out a while in the slow cooker and they will taste much better.
