Banana Spice Cookies

A very good recipe to use those ripe bananas up and the flavor is not overwhelming. I added peanut butter chips instead of the raisins.

Baked Chicken Reuben

After looking for a recipe to use up leftover sauerkraut, I decided on this. It was very quick to prepare and easy to make. My husband (like others) does not like Reubens, however he did like this, although asked when I make it again not to put so much Thousand Island dressing and sauerkraut on his. 60 minutes was all I baked it for.

Turtle Cake I

I made this for my 7th grade class. If you have ever been around junior high students,then you know that don't like anything even when they really love it! However this recipe is so good,even they verbalized they "loved it". One girl said, "If you were my mom, I would be fat!", the ultimate compliment.

Double Chocolate Crumble Bars

Pretty good, but not excellent. I brought it to a family gathering and the kids really liked them. I don't know why the recipe has the name "Crumble" in it, they are more crispy than crumbly.

Tortellini Pesto Salad

After making homemade basil pesto, I was looking for a quick and easy recipe to use it in...found one! I didn't add broccoli or spinach. I did reduce the amount of milk and mayo it called for. And instead of waiting for an hour, I had it for a main dish while it was still warm...very good.

Maple-Mustard Glazed Pork Chops

I was given some maple syrup that had a smoky wood fire taste, so I was looking for a meat recipe to use it in and found this. My husband didn't think he would like it, but he did! I did cut the sugar and added cayenne pepper. I also increased the spicy mustard in the glaze. We enjoyed this recipe and would like to try it again on ham.

Peanut Butter Sheet Cake

I was looking for something to use up buttermilk, evaporated milk, and marshmallow fluff, and I'm glad a found this recipe. The cake and frosting were excellent and easy to make. I used marshmallow fluff instead of marshmallows. I cut the cake recipe in 1/2 and used a 9 x 7 pan, but kept the frosting recipe the same. I topped the cake with Reese's Pieces.

Spinach Tomato Tortellini

I made this for guest, it was very easy and quick. They really enjoyed it, especially the sauce, which I several with homemade bread. I sauted a bunch of chopped green onions and garlic in olive oil before adding zesty diced tomatoes and frozen spinach. I will make it again and use penne and diced chicken.

Seafood Chowder

Great chowder, very thick and hearty. This recipes makes quite a lot, I had to serve it to my co-workers to finish up the left overs. But, they didn't seem to mind! I used frozen corn, and added clam juice, white wine, and mushrooms. When I make it again, I will try to substitute the cream of mushroom for a cream of shrimp, just to add more of a seafood flavor. I will add Old Bay Seasoning, too.

Crab and Noodle Cakes with Cilantro-Lime Mayonnaise

I only used the recipe for the Cilanto-Lime Mayonnaise Sauce. I love the cilantro and lime combination and it was great on the crab cakes that I made.

Gazpacho

I had leftover tomato juice after making salsa and have now made this twice. Each time I have added cilantro and a jalapeno, which does make it taste like a watery salsa.

Lori's Famous Crab Cakes

This was my first time at making crab cakes and these turned out great. I sauteed the veggies before adding them. I also had to use more bread crumbs, because the mixture was very wet. I took the suggestion of others and fried them in less oil.

Garden Gazpacho Salad

I took this to a picnic and received a lot of compliments. However, I thought it was a little bland, and this is after adding basil, oregano, garlic powder, and more salt and pepper. I think I will add some cayenne pepper next time and maybe use a salsa instead of the V-8. I also used venison salami instead of the chicken, which defiantly added to the flavor.

Jen's Fresh and Spicy Salsa

I made this recipe for a dinner, there were no leftovers. I didn't use roma tomatoes, but ones from my garden (Jet Stars). I defiantly needed to drain them. Loved the cilantro and will use fresh garlic next time.
