Pasta e Fagioli II

This was the perfect soup tonight to battle the cold and the wind. My family fell in love with the soup. I too went with the crushed tomatoes in place of the tomato juice and instead of red beans, I went with cannellini beans. I topped it off by having some warm, crusty bread and Parmigiano cheese to top off the soup at the table. Delicious!

Slow Cooker Carolina BBQ

This is the recipe to make if you are a true Eastern North Carolina person. The vinegar makes the BBQ, so no complaints about the vinegar smell. I made one small adjustment to make it a little leaner and that was to make it with a 2.5 pd Pork Lion Roast and removed the fat before I pulled it apart. Adjust your seasonings accordingly and get that coleslaw ready for your great tasting BBQ. Of course, now after eating it I wish I had made some more BBQ, but even the 2.5 pound produced enough meat for about 6-7 servings.

Dad's Escarole and Bean Soup

This soup was so good. The only thing I did differently was to use a 48 oz can of chicken broth instead of using the bouillon. I also followed the other suggestion of adding in celery (two ribs) and red pepper flakes. My husband definitely said this was a keeper.

Balsamic Bruschetta

This was very good, but what made it even better was adding in some chopped up black olives and just a touch of red pepper flakes. I thought I would have leftovers, but I didn't.

Cherry Ham Glaze

I have never gotten my family to eat a whole ham, but with this glaze they did just that. I made no changes to the recipe, it was delicious as it is written. Thanks for submitting this. I will not be making my ham any other way from now on.

Cheddar Broccoli Chicken and Mashed Potatoes

I thought this was a very good, quick meal. I made mine with the thin chicken breasts and between the husband and son there were no leftovers. Also, I used frozen broccoli and wasn't sure if I was supposed to cook it or not before adding. I microwaved it for about two minutes, squeezed the water out of it and then added to the skillet, tasted much like fresh.

Oven-Fried Pork Chops

This recipe was very good. The pork chops were juicy and moist, better than frying them on the stovetop! It actually took less time for me to cook the pork chops because I could lay out 6 chops in the bakeware instead of having to fry 3 & 3.

Slow-Cooker Pepper Steak

I didn't think that I would care for this because I usually do not like green peppers so I cut it down to one large green pepper, and used one large vidalia onion. I guess I am odd but I liked the mushy green peppers, it helped change the consistency for me and I actually found myself liking it. I also threw in a tablespoon of Worcestershire sauce, and some basil, oregano, thyme and it turned out to be delicious and I had plenty of sauce when I finished.

Seasoned Cornish Hens

Excellent recipe. Good flavor and great presentation. Hens were moist and tender; however, the time they have listed is incorrect, I ended up cooking mine about an extra 20-30 minutes and if I hadn't they would have bled red! I served with fresh green beans, wild rice, and a packet of summer vegetables. Great dish for a Sunday Dinner.

Horseradish Meatballs

Ok...I have to admit that I am rating this recipe more on the sauce than the actual meatballs. I had some frozen meatballs that I had bought at BJ's and I needed a quick sauce. I made the sauce and it was to die for! My husband not only ate his portion, but half of mine as well. Like the submitter, I had some rice on the side, along with fresh cucumbers and tomatoes, and it was a quick and easy meal!

Chile Garlic BBQ Salmon

This was great. I panicked because I only had sweet chile sauce, but it turned out great. Gave it a little bit of a sweet taste along with the kick. My kids raved about it, and even snuck back in the kitchen that night for the leftovers.

Garlic Chicken with Orzo Noodles
