Tarragon Lover's Scallops

This recipe is wonderful! So simple, quick to prepare, and incredibly delicious!!! I took a hint from another and instead of wiping out the pan after cooking the scallops, I merely loosened the browned bits in the pan and incorporated it into the sauce...to a spectacular result. Goes wonderfully served on top of a bed of baby arugula with a bit of long grain & wild rice on the side. This one's staying in the recipe box for sure!!!

Pork Tenderloin with Herb Sauce

Like some others, I did this in the oven (350 for 45 min. was perfect). Also used 1/2 the sauce for a marinade and turned the rest into a sauce to pour over the pork when done. Used red wine vinegar and found it a bit too "vinegar-y' for our tastes, but overall this recipe is so easy that we'll try it again with the cider vinegar to see if results are different...

Rempel Family Meatloaf

Chicken Tortilla Soup I

What a keeper! This soup is terrific. The only "changes" I made was to use chicken broth instead of the water, and I doubled the corn as I couldn't find hominy at the market! Regardless, it turned out great - not too spicy, but just right! We will definately be making this one over and over. Thanks!

Oven Baked BBQ Ribs

Great ribs! So tender the meat just falls off the bone. I did, however, follow others' lead and cut the salt, though; also cut the temperature to 325 deg. and cooked for 4 hours. We are going to make these again for sure! Thanks!

Rosemary Roasted Pork Tenderloin
