Well, most of what I'm capable of in the kitchen I owe to my Mom...thanks, Mom! I enjoy cooking most everything and I really like to experiment with new things, so I just keep on trying to find things the kids will like!

The first time I made a chicken dish baked in phyllo pastry...never tried it before and it turned out great.

Tarragon Lover's Scallops
This recipe is wonderful! So simple, quick to prepare, and incredibly delicious!!! I took a hint from another and instead of wiping out the pan after cooking the scallops, I merely loosened the browned bits in the pan and incorporated it into the sauce...to a spectacular result. Goes wonderfully served on top of a bed of baby arugula with a bit of long grain & wild rice on the side. This one's staying in the recipe box for sure!!!

Rempel Family Meatloaf
This recipe is terrific! My mother (who is an incredible cook in her own right) commented several times at dinner on how good this meatloaf was! This is a real keeper - thanks Rempel family!

Chicken Tortilla Soup I
What a keeper! This soup is terrific. The only "changes" I made was to use chicken broth instead of the water, and I doubled the corn as I couldn't find hominy at the market! Regardless, it turned out great - not too spicy, but just right! We will definately be making this one over and over. Thanks!
