Overnight Blueberry French Toast

This was amazing! We did cut the cream cheese in half and only used ten eggs but we probably could have gotten away with eight.

Grandma's Green Bean Casserole

I hate regular green bean cassarole but I loved this. I used fresh green beans, caramelized the onions, used Swiss cheese and French fried onions. Was a huge hit at Thanksgiving.

Crispy Rosemary Chicken and Fries

As is this is not a great recipe. The chicken was a bit bland. The big problem was the potatoes. They were no where near done in the allotted cooking time.

Sausage-Stuffed Eggplant

I followed the recipe to the letter and it turned out to be a disaster. Cooking the eggplant for so long at such a high temp. turned it into mush. The insides were soft and goopy and the shell was no longer a shell; just a soft floopy skin casing.

Double Tomato Bruschetta

I made this for a New Years Eve party and it went like flap jacks! Next time I think I will use dried basil instead of fresh. It seemed like not everyone got basil on their bites. Also next time I think I will leave out the sun dried tomatoes. I am not a fan. Also use a spoon with slits on it to scoop your tomato mix onto the bread. Some pieces felt too wet, even after broiling.

Beef Stroganoff II

I did two things different with this recipe. First, as I browned the meat I added a splash of red wine to the pan. And for my paprika I used 1 tsp. of Hungarian paprika. On the final product the red wine and Hungarian paprika gave it a nice tang. The only this I'm still not sure about is that the sauce was a little thick and I felt like the recipe needed just one more ingredient but I am not sure what. This meal did convert a stroganoff hater, into a stroganoff lover. Pretty good praise.

Spicy Beef Curry Stew for the Slow Cooker

This was a really good, and easy recipe to make. If you like really spicy foods I would go ahead and up the jalapeno's and such. I did not think it was quite spicy enough.

Old-Fashioned Chocolate Fudge

This recipe did not turn out well at all. I followed the advice of others and let it cool down before adding the butter and vanilla. BIG mistake. I could barely mix it. It just tasted like chocolate, not like fudge. And within 10 minutes of pouring it into a pan it became so hard that I could use it as a weapon. I think I'll try a different fudge recipe next time.

Guy Approved Meatloaf
