Chicken Pot Pie IX

I heeded the suggestion to double the sauce and I'm glad I did. The flavor is great. I recommend making two more changes. The first is to boil whole, skinless boneless breasts and then shred them. The second would be to mix the chicken/veggie mixture into the sauce after the sauce is done AND THEN pour into a pie crust. This allows for plenty of sauce to fit in the pie plate without spilling over.

Orange Pecan French Toast

This recipe is an absolutely indulging treat! Prepared the night before Christmas and served after a fun morning of present opening. I used egg nog in place of milk and I'll do the same when I make this recipe again. I found the baking time to be way too short. After an additional 10 minutes in the oven, the bread was still too soggy in the middle. Next time I'll bake for ~50 minutes tenting the top with foil after 40 minutes to avoid the top getting burned.

Best Spanish Rice

This rice was great. I have 2 picky eaters and I didn't hear anything but muffled yums. I had to make a few changes based upon what I had. I used Uncle Ben's Brown Rice instead of white, and Newman's Own Mango salsa. I will definitely make this rice dish again.

Latin-Inspired Spicy Cream Chicken Stew

Super easy meets super tasty!! This is absolutely delicious! I followed it as closely as possible - substituting regular salsa for green salsa (I couldn't find green salsa at the grocery store) and I make my own taco seasonings. I use the Taco Seasonings 1 recipe from this website because it tastes 100 times better than the packaged stuff, plus I . The chicken fell apart on it's own after cooking for 4 hours on high in the slow cooker.

Apple Spice Cake

Super yummy! The only thing I did differently was to use shredded apples instead of chopped - my family doesn't like chunks of fruit in cake! I had a can of cream cheese frosting in the cupboard so decided to frost the cake. OMG!!

Best Tuna Casserole

A very good and tasty casserole. It definitely requires more liquid so that the only crispiness is the cheese and chips on top. I also added a little salt & pepper to the mix before I put it into a baking dish.

Broccoli and Tortellini Salad

This salad is a superb mix of flavors and textures. The sweet dressing paired with the salty bacon and cheese tortellini is summer salad perfection! I followed other reviewers suggestions - used dried tortellini and blanched the broccoli - and will make it the same way from now on. I made a quadruple batch of this salad for a college graduation party and it was completely devoured in 30 minutes!

Slow Cooker Chicken and Dumplings

AS IS this recipe is just OK. There isn't much flavor going on and the biscuit dough definitely needs more time to cook. It needs seasonings (season salt, pepper, thyme) and vegetables (carrots at least).

Baked Kale Chips

I used Olive Oil spray instead as it was MUCH easier and quicker. The taste of these is great, but the smell of your house after is not-so-great. As other reviewers suggest, watch these things very closely. Mine were super crispy (not burned) at 11 minutes.

Apple Coleslaw

Excellent flavor and textures. I had to use apple cider vinegar as it was all I had on hand. I used the pineapple juice from a can of pineapple chunks (reserved the chunks for a school snack). One tablespoon isn't enough to make the coleslaw taste "pineappley". If you like a more creamier coleslaw, add another tablespoon or 2 of mayo. If you prefer your slaw to be zippier, add a little more vinegar.

Rempel Family Meatloaf

Oh dear heavens to Betsy!! This meatloaf is absolutely fantastic! I had to make one modification though - substituting dried minced onions for the onion soup mix (I didn't have any on hand). I can only imagine it tasting even better with the soup mix. I had to cook mine for a full 60 minutes. I will no longer make anything but this meatloaf.

Slow-Cooker Chicken Tortilla Soup

Deliciously amazing soup! Easy to make. I made only 2 modifications: 1. I put 3 uncooked chicken breasts in with everything and shredded it about 1/2 hour before serving. 2. I used all chicken broth (no water).

Maple Salmon

WOW!! This recipe was a hit! I didn't add the garlic salt for 2 reasons - #1 soy sauce is salty enough, and #2 hubby isn't a huge garlic fan. The mince clove was the perfect amount - flavourful but not over powering. I followed the rest of the recipe/directions as written and it came out perfect.

Fast and Friendly Meatballs

All little bland as is. Needs a little salt, pepper, and garlic. Also I had to bake them a little longer - 15 minutes, turn, 10 minutes. I doubled the batch and made 40 meatballs. I am going to freeze them and use in spaghetti sauce.

Banana Nut Brownies

Thought these were easy and fabulous! I heaped the tablespoons of cocoa and measured the mashed bananas as recommended by other cooks. Mine only took 45 minutes to cook and I probably could have taken them out at 40 minutes because they were more cakey than fudgy. But still tasty!

Playgroup Granola Bars

These are absolutely delicious. My husband and I can not stop eating them! The only change I had to make was to use whole wheat flour - it was all I had in the cupboard. I make two recommendations: 1. Have everything ready to go (pan greased, oven on, etc.) BEFORE you start to mix with your hands, and 2. Put the mixing bowl in the sink, or on a low surface, because it's a bit difficult to mix if the bowl is deep and up to high. I had to stand on my toes and I'm 5'6"!

Sweet Baby Carrots

A must-have side dish in our house. I steam the carrots for about 8-10 minutes (my family prefers them with a little crunch). I add a pinch of salt to the butter/honey/sugar mixture. You don't even really need to measure the ingredients for this recipe.

Banana Crumb Muffins

Followed muffin recipe to a T. I added a little more butter than called for in the crumb topping (there was 2 1/2 tbsp butter left on the stick after using 1/3 cup for batter). DON'T use more butter than called for in the topping .... it makes a real mess in the oven! This did not however, effect the flavor one bit. These are delicious!!
