Sausage Scalloped Potatoes

This is a fabulous dish. It turned out very well and was very delicious. I would say the only drawback would be the prep. While it cooks in the microwave, I had to do quite a bit of tending to the dish while it cooked (e.g., taking it out every 4 minutes to stir). This means you can't just leave it to cook and focus solely on something else. Nevertheless, it was well worth the effort!! FYI...It tastes even better the 2nd day after the potatoes have had a chance to marinate in the sauce. YUMMY!

Salsa Chicken

This has become one of my go-to/easy-all-around dishes! The ingredients list is short, simple and inexpensive. It's easy to prep. And, it's Scrumptious (with a capital "S")! I use the chunkiest salsa I can find... usually with black beans and corn. I've served it with a mashed potatoes and rice. I recently made this with chicken tenderloins (vs. breast) and used it as filling for burritos along with sliced avocado, sour cream and a little lettuce. Mmmm.... mmmm.... good!

Leslie's Broccoli, Wild Rice, and Mushroom Stuffing

Sheer awesomeness! I cooked this dish w/ 2 Cornish hens. Such a delight! I recommend that you begin cooking the hens while you're preparing the rice to save time and ensure neither dish is under- or overcooked. i will admit that I panicked a bit when I realized I got home from the grocer w/ a 6 oz. box of Stove Top (vs. 16 oz. as provided in the recipe). But what I purchased was sufficient and is the standard size so I'm wondering if what's in the recipe is a typo.

Texas Chicken Quesadillas

Hmmmm.... Kinda like a McRib on a tortilla. :) Just gave this one a try last night! Was looking for something different than my usual dishes. And, this one definitely did the trick! Scrumptious. I used my boyfriend's fave Montgomery Inn BBQ sauce and he gobbled 'em up! I followed the recipe as recommended for the most part. However, I did fold my quesadillas in half and then cut the finished product into triangles as someone else had recommended to avoid making a mess and because the 10" tortillas seemed huge. Only used 3 of the shells for a dinner for 2. Had enough chicken and onions for 4. I'm pretty generous with filling the shells. And, I par-baked mine per se. Assembled and fried them for a few minutes stovetop then I put them in the oven to ensure the cheese melted fully and that the chicken was hot after sitting out while I assembled the quesadillas. The caramelized onions were indeed a nice touch. Didn't know how to get that flavor until trying this recipe. Now, I'm feeling like a real chef. ;)
