Creamy Celery Casserole

As my girlfriend was leaving on holidays and unloaded her fridge on me, I received along with other things celery which I had just purchased myself on shopping day. So the hunt was on....this recipe fit the bill to a T. Used fresh crimini mushrooms instead of canned, fresh red bell peppers, some green onions and minced a couple of garlic cloves to boot. Did 50/50 butter and canola oil for cooking the veggies and made the roux with almond milk. It turned out amazeing. Very flavorful and fresh tasteing. Thanks for a keeper.

Poor Man's Caviar

This was amazeing. Did add the garlic & the zest and juice of 1 lime. Only had dry celantro so can only imagine how even greater it would be when useing the fresh. Used regular canned corn and some chopped fresh red bell pepper. Our guests left with big smiles, a small togo pack, and the recipe. Will certainly make again.

Quinoa with Sweet Potato and Mushrooms

Made this for lunch today. Used veggie stock instead of evoo and water. Came out perfect. Did add some spinach at the end to wilt. Certainly made for a full meal deal. My husband loved it and thought it very tasty and filling.

Fresh Rhubarb Bread Pudding

My husbands mother used to make bread pudding which I never thought as something that great, but he loved it. So for fathers day I decided to make this one up as I had just been given fresh garden rhubarb. He was crazy for it and I also really enjoyed it. The only changes I made was used pecans instead of walnuts and tossed in a handful of craisins with the rhubarb. Today my husband came home with some day old bread in the hopes that I will make it again. I think that says it all...

Ground Beef Mexican Style

Great taste and quick to make. Did not have gound beef so used gound venison. Used a spicey salsa for some bite. Mixed bell peppers which added lots of color. Chopped up a large white onion as I did not have enough green ones(used them as a garnish instead)and fried them up with the meat. I also used a few cloves of garlic minced. Replaced the egg noodles with multigrain fusilli and used fat free sour cream to cut down on some of the damage. :o) Though I did up the cheese to a cup as others had suggested. Will be sure to make this again and next time for company....

Made this just as the recipe calls for...WOW!!!! Just as good if not better then store bought. Perfect in coffee and sipping it straight is finger licking good...:0)

Feta Cheese Turkey Burgers

These are the best ever. Have made them several times over the summer. I use regular sliced black olives as that is what is available around here. Still they taste great. After making up the patties I freeze them and when ready to BBQ put them on the grill frozen. They stay together beautifully and come off the grill moist on the inside and well grilled on the outside. Last time we cooked them over an open campfire. The added smokey flavor was to die for. Thanks for a great recipe.

Rib Eye Steaks with a Soy and Ginger Marinade

I am always on the hunt for new ways to cook game meat. This went to the top of the list. Put frozen deer steaks in the marinade for two days giving them a stir every so often.... OMG ... Took them to a potluck BBQ. They grilled up so well. Moist and tender beyond belief and no gamey taste. Also boiled up the marinade a suggested for an added bonus, but the meat was so good it real didn't need it. Any changes a person might make is because of personal tastes. Want more heat, up the pepper sauce etc, otherwise this is great as is. If I could give more stars I would have. Thanks William

Asparagus, Feta and Couscous Salad

Made this for a potluck BBQ. It was a big hit with everyone. Made it the day before and let it sit in the fridge and get happy. Used the white balsamic as suggested so the colors stayed fresh looking. Did not have enough feta on hand so also added blue cheese as well. Next time will add basil and maybe some green onions. Thanks for a great couscous recipe.

Jamie's Cranberry Spinach Salad

Used what I had on hand. Pecans,mixed greens with the spinach, splenda for the sugar,and dry toasted the nuts and sesame seeds. Put some red onion bits through my garlic press. Used olive oil which I halved and replaced with water. As others had said they put on some snappy cheese of some sort which I did not have on hand but I did have some left over cheese bread which I cubed and toasted as well. When all was done it made for one of the best salads I have had in a long time. Really hated to see it come to an end....just wanted to eat & eat &........ :o)

Pecan Cookies

These cookies were the best! I put all the dry ingredients in a large bowl and mixed well. I used splenda brown as well as white sugar replacements. Then I cut the butter in with a pastry knife. I then added a 1/3C egg whites only and the vanilla, then blended with a spoonula until everything was moist then stirred in the chopped nuts. Used my cookie scoop to make sure the cookies all came out the same then flattened them with a fork chilled in ice water. Next time I make these I am going to try and double the recipe as I can't seem to keep up with the demand for them.

Pork Chops for the Slow Cooker

Made this for the first time with company coming...making extra for leftovers...so much for that plan. Did add a large onion sliced and subbed Splenda brown sugar for regular. Had lots of juice to put over the brown rice I served along with veggies. The chops were fall apart tender and moist. This is a keeper for sure...look forward to making it again soon.

Stuffed Duckling

Loved the stuffing. Did not have raisins so used "Craisins".. When I do this dish again will maybe toss in a peeled chopped orange to go with the dryed cranberries. Thanks for an easy and tasty way to do duck. May even try it with chicken next time.

Balsamic Glazed Carrots

These were THE best ever. Did not have baby carrots so did a large dice of regular carrots. Used much less oil and "Splenda" brown sugar with a good quality balsamic. The type of balsamic used by others my contribute to their not likeing this recipe. Will make this often and can hardly wait to get at them again.
