Quick and Easy Home Fries

Great restaurant style homefries...I use oil instead of butter and dry off the potatoes well before cooking.

I thought these meatballs were tender and delicious! The sauce came out great too although I used fresh tomatoes instead of canned crushed and I didn't have any tomato paste...besides that I was pretty faithful to the recipe (sans the sugar). Thanks!

Banana Cream Pie I

This was excellent, though harder to make than I originally anticipated. I couldn't believe how long it took for the bubbles to start forming in the pudding - it was more than half an hour. But well worth it!

Not as flavorful as I would have hoped but I should have added more salt and I like it to be more spicy so in the end I added a bunch more cayenne. Not bad though...

Brown Rice

I made this as a side for a country style crock-pot ribs and it was absolutely perfect and delicious. I used brown rice instead of white and I didn't have french onion soup so I used chicken broth with onion and black pepper spices and worcestershire sauce instead. I also added some fresh parsley into the mix. It was a great side for my dish!

Chicken Tikka Masala

This is possibly my favorite dish ever. After years of experimentation, minor modifications have perfected this dish for me. I toss two large cubed up chicken breasts in low-fat plain yogurt with the other marinade ingredients (according to the original recipe), refrigerate in the marinade for an hour or two, spread the cubes out on a foiled tray, and bake at 400F for 15 minutes, then stick under lo broil for about 5-10 minutes, until slightly browned. While the chicken is cooking, I make the sauce. I use half butter and half olive oil, pre-diced jalepenos and pre-minced garlic. I use a large (28 oz) can of tomato sauce, a half pint (small container) of heavy cream, and maybe slightly more of each spice than the recipe calls for (except salt; I may use a total of 3 tsp in the whole recipe). This makes a good amount of sauce to coat the chicken and plenty for dressing the rice! Once the chicken is out of the broiler, I dump it in the sauce, cook on low for another 10 minutes and serve on fresh Basmati rice (with cilantro if I have some). Best.Indian.Dish.Ever. :)
