This is possibly my favorite dish ever. After years of experimentation, minor modifications have perfected this dish for me. I toss two large cubed up chicken breasts in low-fat plain yogurt with the other marinade ingredients (according to the original recipe), refrigerate in the marinade for an hour or two, spread the cubes out on a foiled tray, and bake at 400F for 15 minutes, then stick under lo broil for about 5-10 minutes, until slightly browned. While the chicken is cooking, I make the sauce. I use half butter and half olive oil, pre-diced jalepenos and pre-minced garlic. I use a large (28 oz) can of tomato sauce, a half pint (small container) of heavy cream, and maybe slightly more of each spice than the recipe calls for (except salt; I may use a total of 3 tsp in the whole recipe). This makes a good amount of sauce to coat the chicken and plenty for dressing the rice! Once the chicken is out of the broiler, I dump it in the sauce, cook on low for another 10 minutes and serve on fresh Basmati rice (with cilantro if I have some). Best.Indian.Dish.Ever. :)
