Baked Dijon Salmon

I have made this several times and it is now a family favorite. Last night I realized we did not have Dijon mustard so I substituted Ken's Steak House Honey Mustard dipping sauce/salad dressing. Didn't add any honey but still used the butter. Tasted great and it was even easier!

Braised Balsamic Chicken

This has been one of my favorite chicken recipes for several years. I usually double it so I can freeze half. To make it particularly freezer friendly, I cut the chicken into small pieces before browning. My kids like it over pasta with Parmesan cheese.

Fire Roasted Tomato and Feta Pasta with Shrimp

This recipe was desperation based. Couldn't figure out what to do with a bag of frozen shrimp until I found this recipe. Quick and didn't take anything unusual. Didn't have fresh basil but dried worked just fine. Added some fresh parsley for garnish. Looking forward to making it again!

Black Beans and Pork Chops

I have made it twice, the second time with boneless chicken. Family preference was chicken. Used fresh salsa both times. So good we had it two nights in a row!

Peach Ice Cream

Very good recipe! The only thing that I did different was to pasteurize my eggs first to feel safer about raw eggs for my children. I used the method from the baking bites website.

Fruity Fun Skewers

I added some pitted fresh cherries that were a big hit. Since it was for a birthday party, I used two round birthday stickers stuck together to cover up the end of the skewer so they were more decorative.

Easy Pizza Sauce III

I must confess in all the years that I have made homemade pizza, I never made my own sauce. Today wouldn't have been any different except that I forgot to buy some! This recipe was just perfect and got rave reviews. Next time I might try the suggestions of fresh garlic and basil. Easy and great!!

Corn and Zucchini Melody

I used canned corn and leftover Swiss and cheddar cheese that needed to be used. My teenager who normally doesn't like anything green (other than money!) ate a big helping without ANY complaints. Definitely a repeat recipe. Next time I will double it for some leftovers!

Mexican Lasagna

My family really liked this recipes! I put the hamburger meat in the food processor to have a finer consistency. Because I used more than a pound of meat, I had to add a bit of salsa to the meat/bean mixture to make it easier to spread. I also added fresh spinach to both layers since I'm a sneaky veggie mom!! I cut the lasagna into squares after being in the refrigerator and wrapped them in saran wrap for freezing. I had one for lunch today and it was wonderful! I have passed this recipes on to several friends. Yum

Cake Balls

I keep a box of uncoated dark chocolate balls (my personal favorite!) in the freezer that are well wrapped up. It's an easy way to make just a few at a time. They are my favorite dessert!
