Braised Balsamic Chicken
This has been one of my favorite chicken recipes for several years. I usually double it so I can freeze half. To make it particularly freezer friendly, I cut the chicken into small pieces before browning. My kids like it over pasta with Parmesan cheese.

Fire Roasted Tomato and Feta Pasta with Shrimp
This recipe was desperation based. Couldn't figure out what to do with a bag of frozen shrimp until I found this recipe. Quick and didn't take anything unusual. Didn't have fresh basil but dried worked just fine. Added some fresh parsley for garnish. Looking forward to making it again!

Black Beans and Pork Chops
I have made it twice, the second time with boneless chicken. Family preference was chicken. Used fresh salsa both times. So good we had it two nights in a row!
