About this Cook
I have been cooking ever since I can remember, and spent numerous weeks being grounded in gradeschool for "experimenting" in the kitchen whenever my parents would leave me alone. I like to think that I have improved since then. I will still admit that maybe once a year I prepare a dish so terrible that I deserve to be grounded!
My favorite things to cook
I love to cook (and eat!) Italian and Indian food the most. I also love Asian cuisine, but I leave that up to my husband because he's an expert in that field. I am health conscious and always looking for new healthy recipes, or ways to make old favorites healthier without sacrificing taste.
My cooking triumphs
Through high school I worked as an in-house cook at a rectory, cooking for two priests. I would plan the meal, prepare it, and clean it up afterward. I think my main triumph was not getting fired. In fact, I think they ate every meal. Of course, they were priests so maybe they were just being polite... :)
My cooking tragedies
My biggest (and most recent) "critical failure" would have to have been chocolate cookies with white chocolate chips about 2 years ago. I'd even made a special trip to the grocer to pick up the white chips! They baked beautifully and smelled delicious. I took the first bite and it was great... for about 3 seconds. Then the terrible taste of pure baking soda set in. Apparently, in a blonde moment, I misread teaspoons as tablespoons. It was SO depressing to throw those away!

Grilled Fish Tacos with Chipotle-Lime Dressing
My husband and I both really like this recipe and have made it a few times. We now make it with a simple flour/salt/pepper/seafood seasoning mix as breading, then fry it. (I know it's not as healthy but the breading is our favorite part of fish tacos!) I had a hard time finding the adobo sauce until I realized it was in a little can of chipotle peppers in the Mexican Foods section of the supermarket. I drain the adobo sauce off, then freeze the chipotle peppers in a freezer bag for later use in different recipes. Make sure to strain the seeds out of the adobo sauce unless you like it REALLY hot! As another reviewer suggested, an easy healthy modification is to replace the light sour cream with plain Greek yogurt. I always have some on hand anyway and tried it upon reading the review. Delicious - great idea!

Sangria! Sangria!
This is a favorite for summer BBQs and people always ask me to bring it. I don't have a specific wine I use - though I prefer a dry red and use less sugar, testing to taste. I use the citrus fruit as recommended by the recipe, but it would probably be great with green apples instead, as suggested by another reviewer. Because I like to keep it "dry" rather than sweet, I add carbonation with lemon-lime flavored seltzer water instead of 7up. This one is definitely a keeper!

Sun-dried Tomatoes I
I had an abundance of cherry tomatoes and this recipe worked great. I used a melon baller to scrape out the seeds after cutting them in half. It took about 5 hours in the oven for the smaller pieces. This was a great option to save some tomatoes before they went bad!
