Cheese Corn Spoon Bread

What a yummy discovery. Everyone loved it and went back for seconds. I leave out the whole can of corn and cheese. I used 1 1/2 boxes of the jiffy corn muffin mix to equal 12oz. of corn bread mix. Added a 1/3 cup of sugar. It's definately a keeper!

Best Ever Muffins

These were okay. They were kind of tough, and the kids weren't overly thrilled by them, even with choc. chips. Hoping to find one that is a little cakier and not quite so heavy.

Pesto Sauce

I have never made a pesto sauce, and tried this recipe. It was absolutely delicious! I did do two things different, which were using almonds in place of the pine nuts, and parmesan cheese (in the can) in place of the fresh p.c. I do plan on trying the fresh p.c. sometime, but the other worked out fine.

Peppermint Patties

Soooo good. I used 3 1/2 cups of powdered sugar, 2 tsps. mint extract, with a dash of almond extract. Instead of patties, rolled into smaller than marble sized balls. Put on waxed paper, froze, then dipped one at a time in choc. Can also drizzle choc. on balls, but the dipped do look alot nicer, if giving away. Good project to do in front of t.v. when you're not in a hurry.

Herb Roasted Pork

Yum!Yum!Yum! If I could give it more than 5 stars, I would! An abosolute keeper and great find! Here are a couple of changes that I made. Dbl. dry rub, 4 twist fresh pepper, scant 1/2 tsp. garlic pepper, brown sugar in place of white, flour in place of cornstarch, and balsamic vinegar.

Green Chili Casserole

This was soooo good! It reminded me of a chili relleno. I doubled the recipe, added a couple of extra eggs, extra cheese, a scant 1/2tsp. salt, 1/4tsp. pepper and 1/4 tsp. garlic pepper. Yummy with hot sauce and sour cream.

Chocolate Eclair Dessert

Love this recipe! My daughter in law asked for the recipe, and said, "that's it?" I've made a recipe like this many times and really liked it, but this recipe says to do two layers instead of one. Really liked the difference two layers made. I also like to make homemade choc. frosting instead of the prepared.

Amy's Chocolate Chip Cookies

Mmm. While writing this, my 19 year old son just said, "oh, thanks for the cookies mom, they were really good." Mine didn't turn out chewy, but had more of a somewhat chewy, flakiness to them. How in the heck can a cookie have chewy and flakiness at the same time? And what does that even mean? I don't have a clue. So, if you want something different from the chewy cookie, or the hard cookie, this one's for you. Just for the record, I used sugar free vanilla pudding, (that's all I had), butter, and 1 tsp. salt.

Best Big, Fat, Chewy Chocolate Chip Cookie

I just noticed it calls for unsalted butter. I used salted butter. That's why it tasted a tad bit salty, but still good. Someone suggested mashing the cookie some before cooking. Mistake. I did this the first batch and didn't like the results. Didn't smash down the second batch, and turned out perfect. The Tbl. of vanilla gave it a nice flavor. And for whatever reason, I think the yolk made a difference in the texture. Give 'em a try!

Guacamole

This guacamole is the bomb. Whenever I make it for family get togethers, more than one person will say, "Yeah, Cheryl brought her guacamole." I've also been asked for this recipe quite a few times. For my personal taste, I like to add extra tomatoes. This is absolutely a must try recipe. It is Muy Bueno times diez.

Chicken Enchiladas V

These hit the spot! Corn tortillas are a must. Also added a can of hot rotel to soup mixture, which gave it a perfect kick. My new discovery, is the Havarati cheese sold in slices at Costco. What a great melting Cheese! Added 1/3 of a slice inside the tortilla, and grated cheddar on top.

Award Winning Soft Chocolate Chip Cookies

Slight crunch on the outside, soft on the inside. Perfection! I made a couple of changes with the suggestions of others. Though I really don't think they're necessary other than the salt. Changes: 2Tbl vanilla extract, 2 tsp. baking powder, 1 tsp salt. Yum yum!!

Wasabi Yellowfin Tuna

My favorite selection at the Cheesecake factory is their Wasabi Crusted Ahi Tuna. I bought a bag of individual servings of frozen Mahi Mahi at Costco hoping to find a recipe like this in allrecipes. It's not exactly like Cheesecakes, but close enough. Yum yum yum! My husband and daughter kept telling me how good it tasted. I didn't add the five spice, and since I love wasabi added extra. That's something that can easily be played around with. I also doubled the first ingredients so I would have enough to re-apply before I was ready to cook. After re-applying one side I then coated with panko crumbs and did the same on the other side. Oh so good! Thanks for sharing Jennifer!

Pumpkin Chocolate Chip Muffins

I doubled the recipe and I couldn't believe how quickly my family had devoured these! They loved them. I went ahead and doubled the spices. Oh, and just for the heck of it I threw in a little vanilla and almond extract. Thanks for the "just what I was looking for" recipe Donna.

Crustless Spinach Quiche

My 20 year old son ate half of this quiche in one sitting! I did add two extra eggs, and 3 1/2 cups of havarati cheese. I like my salt, so added a 1/2 tsp. (+) salt. Used 8 cups of fresh spinach. By the time it sautes down you would've never known there were 8 cups to begin with. I also added sliced (long) grape tomatoes, cut side up to the top of mixture in pie pan. My son said that was why he loved this recipe so much. Amazing recipe. Side note-sauteed fresh mushrooms for those who wanted to add those on top of the already cooked quiche.
