Tricia's Pineapple Cheese Casserole

Doctored it up a bit // added 2 cans of the chunk and 1 can of crushed pineapple and it came out awesome. kept the juice w/the crushed but didn't use the chunked juice. I also used an entire sleeve of the ritz crackers as it gave much better look and then I didn't waste any crackers by getting stale. I dabbed butter ontop and baked as directed. It went over wonderful w/the additional of pineapple & crackers.

Sweet Coated Pecans

Good but not the greatest I've tasted. Don't like the way they coat .. Think it needs a bit more flavor - something seems to be missing.

Cream Corn Like No Other

Tweaked a little by adding fresh corn. Yummy!!! Doubled it and used 6 tbpn of smart balance, and since I ran out of cream used whole milk and it still made it creamy and delicious.

Brown Sugar Meatloaf

Thought this was a wonderful tasting meatloaf. I did not like the mixture on the bottom as I personally like the glaze on top; which I will try next time. BUT I DID add some back slices on the top & then sprinkled brown sugar on the bacon & the flavor from the bottom and top made such a great taste. Good! Will use again in future for a different flavored meatloaf.

Pineapple Casserole II

More like dessert. Not really much flavor other than pineapple and bits of the cheese/cracker crumbs. Not sure if would make again.. BUT if I did would use this to serve ice cream over it only.

Candy Coated Pecans

Not satisified with this either. Tried both of them. Seems as something is missing. Needed to bake these longer to help 'dry' up the nuts/mixture.

Ropa Vieja

Very good. Close to what I've had in Cuban rests. I would suggest to add some peas or maybe some pepper sliced. What I also did was after shredding up meat, put it back into the sauce and let it absorb more flavor.

Bum's Lunch

Good idea. I had to dr it up a bit. I browned the meat/potatoes & I added onions. then baked it. Sliced the potatoes long-ways & they ended up perfect! Only suggestion my husband had was to let it have gravy -- so w/the left over 'juice' i had I used that to make him some gravy for his leftover lunch.

Used the confectioner's sugar! Wonderfully great!!!! Would use again but w/this change. Husband said best he's ever had (minus fudge shops in St. Augustine)

Cube Steak Parmesan

I decided to sprinkle salt, garlic/onion powder onto meat and let sit. then i used egg/milk to dip into italian bread crumbs. I baked as directed - but next time I will put in a casserole dish and have red sauce surrounding item to let it be a bit more flavorful. For the most part happy w/recipe and would use again. Very different change from the ordinary.

these are not the prettiest cookies but they sure are yummy!!!! my husband thought, ughh .. but then could not get enuf of them. a definate treat as they are sweet and full of calories.

My Kid's Favorite Pork Chops

Not bad, would prefer to have with RIBS instead of the chops. I sauteed the onions 1st which made a good taste to the sauce .. The flavor was good -- But will try next time with ribs.
