Byrdhouse Spicy Chicken and Peaches

PERFECT amount of spice-to-sweet, even for someone like me who doesn't like spicy! Used the reserved peach juice instead of OJ since that's what we had, and that turned out just as yummy!

Honey-Dijon Chicken

Boiled Peanuts

I like mine salty: the trick (to get the right flavor), is to boil them to the right consistancy, usually about 2 hours. Then, if you want them saltier, DO NOT add more salt and boil some more. Rather, let them sit in their brine as it cools. Every 20 minutes or so, taste one. When they are salty enough for you, drain them. (This means you don't have to taste hot peanuts, and they don't get too soggy. It also gets them saltier quicker.)

Chocolate Mousse Cake I

Pretty awesome, and this from someone who doesn't like chocolate all that much... I made two tiny cakes- basically 1/4 the recipe, and that was enough chocolatly goodness to last me a month. To answer an earlier reviewer, my husband doesn't like coffee, so I left that out of the mix, only to find it VERY watery... so I kept adding powdered cocoa and a *little* flour, until I thought it was the right texture. I couldn't begin to tell you how much I added- just a little at a time, until it looked right. So yes, you can do without the coffee, and it tastes fabulous.
