Spicy Vegan Lentil Quinoa Soup

I think this a very yummy, simple dish to make. The flavors are really nice, but most people will probably want to add salt or use vegetable broth instead of water. I personally didn't add any salt but I added red onion, garlic and mrs dash seasoning to kick up the flavor just a bit.

Basic Crepes

This is my new crepe recipe, the only thing I would do different is mix wet ingredients first, then add the flour, works out better that way.

Toads in the Hole I

Wow! this is wonderful! I halved the recipe because I only had a few little party weenies. Being that the little weenies don't make much grease, I added a tablespoon of butter to the base. Yummo! I also used plain rice milk because that's all i have!

Vegan Crepes

Very good, didn't miss the eggs at all. I used evaporated milk, real butter, and half molasses and half agave sweetener, no sugar. I don't eat vegan, I just didn't have any eggs, so this was a good alternative recipe.

Almost No Fat Banana Bread

wow this was really good. i used sarah's applesauce from this site, added 1/2 cup quick cooking oats & 1/4 cup walnuts. i also used 1/2 cup honey instead of sugar. hubby said it was really fragrant!

I thought it wasn't that crucial to drain the onions... I was wrong! They did not get crispy enough for my taste. Next time I will either drain the onion or use onion powder!

Pumpkin Pie Flan

Quick and Easy Stuffed Peppers

1st off, lil disclaimer: I didn't exactly follow the instructions/ingredients! But I still feel qualified 2 rate this 5 stars bcuz I wouldn't have had the idea if this recipe wasn't here! I was looking 4 a quick meal while @ lunch break, couldn't use anything canned bcuz we don't have can opener @ wrk. So I used lentil soup (in a box), frozen spinach & marinated artichoke hearts. I topped them with a lil hummus & feta cheese. OMG, so so good!

Award Winning Peaches and Cream Pie

I did the unthinkable and tried this out for the first time on a large group at a bbq - it was a hit! I doubled the recipe and baked in a 9x13 disposable aluminum baking pan. I baked it for 35 minutes and then turned off the oven and opened the door to let it cool that way. It was really really good and I got lots of compliments. I will definitely make this again.***Update 8/23/11 - I made it again already, this time with apple pie filling instead of peaches. OMG so wonderful! It's really like a pastry more so than a pie. I decreased the sugar by half because of the sugar in the apple pie filling, some of which was mixed in with the cream cheese & sugar. Soo soo good. I baked it in a 9-1/2" springform pan. Maybe because of the extra gooeyness from the apple pie filling, I had to bake it an extra 15 minutes. Then I let it cool the same was as before, turn off the heat and leave it in the oven with the door cracked open. Yum Yum Yum, try it!

Indian Chicken Curry (Murgh Kari)

Very very good and authentic tasting. I put everything, except the lemon and yogurt, in the slow cooker on high for about 4 hours. I even threw the chicken in there frozen! After the first 4 hours, I added the yogurt and cooked about another hour. I forgot to add the lemon juice, but next time would do so just before serving. I used greek yogurt and did not add water or use oil but used twice the amount of crushed tomatoes. I also used only 1 teaspoon of salt, which was plenty. I think the slow cooker method made it very flavorful, moist, healthier and easy.

Caprese Appetizer

I agree that good mozzarella and marinating is the key to making this outstanding, and not just okay. I didn't have much time so I wasn't able to marinate them any. I used kabobs and made a ton for a baby shower.

Fettuccine Alfredo III

This is better with much less butter, maybe 1/4 cup, 2/3 cup parmesan cheese and lots of water from boiling the pasta, as needed. This is the original alfredo sauce, I was there. JK ;)

Baba Ghanoush

Pretty good but mine came out too garlicky. In the future I may either use less or maybe saute or roast it first. I used freshly ground sesame seeds instead of tahini because my middle-eastern friend said it was better that way. Hers still tastes better than mine did :( but I believe that her secret may be a really good olive oil, which I am always too cheap to invest in. Maybe it's time!

Lemon Cupcakes

What a great recipe, love baking from scratch. I had to improvise slightly based on what I had on hand. 1st of all, I cut the recipe in half and made 36 mini cupcakes. I didn't have self-rising flour so used regular flour with 1-1/2 tsp baking powder and an extra pinch of salt. I had to use orange zest because that's all I had. I also had plain white frosting that I had to use up, so I used that and topped it with sour lemon gummies and sprinkles of crushed lemon hard candies. It was very good and I can imagine I'd love it even more with lemon zest.

mmm mmm, another reviewer said it best - "nothing goes better with gin than lime" amen to that. I used 2:1:1 lime infused gin, unsweetened lime juice, white sugar and gave it good shaking with about a cup of ice in my cocktail shaker. Now I want to go out and buy more gin and lime juice!

Beer Bread I

I did not have self rising flour so I used 3 tsp of baking powder and 1-1/2 tsp of salt. I used Michelob Ultra and followed other reviewers' advice to use 1/3 cup sugar. I really liked the ease of this recipe and the texture and taste, but I think I will decrease the sugar next time and use a really good beer.

Mayonnaise Cookies

wow wee wow! these are really good. the dough is very crumbly but i just handled it more carefully. they held together well once they cooked. i made them slightly larger than walnut size and yielded 2 dozen. i did not do the final sugar sprinkling and felt they were sweet enough. my oven runs hot so i cooked them at 325 for 10 minutes and let them cool on the pan for bout 5 minutes. i can't wait to trick my family into eating mayo, they hate it but i know they will love these cookies.

Creamy Rice Pudding

Very tasty and easy to make. I added chopped apples and shredded coconut to the raisins but i added them all at about half the cooking time. next time i will add them earlier so the apples can get softer. I also added cardamom and cinnamon and more milk.
