Moroccan-Style Stuffed Acorn Squash

This is one of the best possible ways to cook acorn squash. I added diced chicken breast to the carrot mixture. All of the spices blended together, the couscous, and the veggies, which are only further augmented by the natural taste and texture of the squash, come together to create a phenomenal creation. Thank you so much for the recipe! I'll be making this one again and again...

Calamari

My Nana is from Itlay and calamari was one of her favorite foods. I had no idea how to cook with calamari but I found this recipe and made this for her for her 95th birthday. I believe it was one of her favorite things she had eaten in recent years. The only change I made, upon recommendation from my fish monger, was to soak the calamari in milk for 15 minutes after cutting it up but prior to dredging it in flour. The calamari came out perfect. I applaud this recipe for being so simple and delicious, and for allowing me to memorialize my Nana on her birthday. Thank you!

Sausage-Stuffed Eggplant

This is a great recipe and has led me to even better things, and it's relatively inexpensive. I've made a couple of variations on it now, but I usually add black olives, cottage cheese and jalapenos into the mix. I also use turkey sausage instead of regular sausage to reduce the caloric intake. It bakes perfectly, like a little eggplant boat. It's also good if you top it with panko or bread crumbs and some cheese and bake a few minutes longer. Overall this is an excellent creation and I'm grateful to have this recipe in my repertoire!

Hearty Meatball Soup I

This was a good recipe, although it may have been better had I not made the following adjustments. I didn't have any bullion or stock, so I added a can of undiluted chicken noodle soup in addition to the cream of mushroom soup to enhance the flavor. I also added corn, peas, onions and tomatoes. I added extra water to avoid it being too stew-like, per other reviews. And per another review, I baked the meatballs instead of frying them in the oil to avoid extra calories, which I think is a great suggestion. The basic recipe is great to go by, you can make your own adjustments as needed. Thanks!

Ground Beef Shepherd's Pie

I was craving a great recipe for Shepherd's Pie. This was perfect...I used ground turkey (which is better if you want to eliminate extra calories) and frozen peas and corn. I saw on some other reviews the addition of Cream of Mushroom soup, but I used Cream of Chicken (undiluted, heated in the microwave) and it was a nice addition. Use some Betty Crocker instant mashed potatoes for a quicker cook - it's much faster, and layers the same over the turkey/veggie mixture. I added some ground red pepper to the mashed potatoes to give it a spicy kick. This is a great recipe and I recommend it to all!

Eggplant Tomato Bake

This is an extremely easy and delicious recipe! I did not brush the eggplant slices with olive oil to avoid unneeded calories, and they came out just fine. I did season with salt and pepper. On a couple I layered some spinach between the eggplant and tomato slices, and those came out good too. Highly recommended recipe!

Lazy Lasagna I

This is a very good recipe. I used a sausage pasta sauce so in addition to the sausage already in the lasagna it was a little overwhelming, but very good nonetheless. I also added some ground red pepper to the pasta sauce to give it a little kick, which I hughly suggest. Enjoy!
