Delicious Salmon Pasta Salad
Having made this recipe a few times (including twice this week), I thought it was time to rate it. This is a great recipe, with the entire cup of olive oil. I first made it with less, but it made the dressing too sour. Definitely make the dressing as written, but taste as you add it to determine how much you need. This will be one of my basic recipes.

Brown Sugar Meatloaf
This was a great loaf, but the topping is much too sweet as is. I had 2 lbs of meat, so I increased everything else in the loaf proportionally (I used 3 eggs). I didn't have crumbs, so I used oatmeal, and I used fried onions because I had them already. I baked them as 8 individual loaves (45 min) and 1 larger loaf (1 hr), and they were so soft and moist, just marvelous! I don't keep ketchup in the house, though, so I used a small can of tomato paste and added onion powder and 1/4 c. sugar. It was so sweet, I had to cut it with another can. I know this has sugar in the title, but when I made it the first time (I think with no changes to the sugar), I couldn't stomach the sweetness of the topping.

Thai Chicken Curry in Coconut Milk
Great recipe. I didn't have certain things, so I substituted lime for lemon and tahini for fish sauce (and added salt to compensate) I also doubled the curry paste (because I had only mild), and the slight heat was nice. Great blend of flavours!
