Fluffy Pancakes with Wheat Germ and Applesauce

Super yummy! My kids and husband liked them. I substituted 1/4 cup oat bran for some of the white flour, used egg whites only, no yolks, and thinned with water no milk, and no oil-just applesauce. Tasted great, very filling. Will make again for sure. I have mixed up the dry ingredients into plastic bags so I only need to add wet stuff to make, much faster that way on the weekend for a quick breakfast.

Golden Sweet Cornbread

Super yummy. Kids love it so does the hubby. I like that it is not too crumbly, others I have tried fall apart to easy while the kids try to eat it.

Lemony Steamed Fish

Great fish!! I used fresh halibut, very good. My husband did not believe it had no butter or salt(I left it out). Will make many more times. I did make it in a dish. Thanks!

Banana Nut and Ginger Bread

Awesome taste. Takes a little time, but worth the effort. I started using this recipe since it called for so little oil. I just have to plan ahead, cause we do not have beer on hand.

Low-Fat Blueberry Bran Muffins

Excellent muffin. I made them once with heavy cream, to try and get the preschooler to eat them. They were awesome, of course not low fat though. I also do not mix the berries in, I place them into the batter once in muffin cups. Quick to make.

Cinnamon Raisin Swirl Bread

Tasty bread, easy to dry out though. Easy to make. I did not use a bread machine. I also made it using cranberries instead of raisins, just as good.

Spiced D'Anjou Pear Bread

Best bread ever!!!!! I love not having to wait for the pears to ripen. Wonderful flavor. I made a few changes-applesauce for oil, used 3 eggs, diced pears instead of slicing them, added pecans and baked in mini loaf pans. Hard to keep around once baked.

E-Z Drop Biscuits

Very easy. My son can't eat dairy so I substituted plain soy milk and canola oil. They came out great. I cooked them in my cast iron drop biscuit pan, wonderfully crispy on the outside and flakey on the inside. I also made a variation by using applesause and soy milk, adding cinnamon and apple chunks. I added a little more sugar to sweeten and they are a great dessert. I have always added more fluid than it calls for, probably about 1/2cup more since I am baking them in cast iron pan.

Double Cherry Pie II

Awesome! Great presentation and flavor. I used 30oz of sweet frozen cherries and 2 cups dried tart cherries. Next time I am going to try making a crumble topping to reduce the amount of crust.

Excellent! I did not use bread machine, but put all together and let rise in oven for an hour at 200 and then baked per recipe. They were all gone with 48hours!

Pumpkin Bread

Awesome, but I did modify it. I used applesauce instead of oil, used brown sugar for the white, substituted more pumpkin for the 2/3cup water and added walnuts. It did not last long, well worth the effort.

Peach Pie

First time pie maker with this one. It came out great. I used frozen peaches about 40oz and found I probably could have used one more package. I added about 1 tablespoon corn starch and filling was perfect. Forgot the spices, but will try next time. I will also try less crust on top or a crumb type topping. My family just is not a big crust fan. I mixed all ingredients together in bowl instead of layering per other reviews, really worked well.

Mashed Potato Cakes

Great! I used about 3 1/2 cups potatoes and seasoned salt instead of other seasonings. I did do egg wash, but found they stuck to sheet even with non-stick. Will try without next time. I look forward to mixing it up with other additions. Will make again for sure.
