Family-Style French Toast

SUPER TASTY! I have never seen my kids devour any breakfast food like they did this. I had to put it in two dishes, added nutmeg and baked for around 40minutes. I think I will use significantly less sugar next time as well as less butter. No need for any syrup. I did cook some pears and put those on top when serving. Plan on trying apples in the bottom of the pan too and using raisin bread.

Whipped Sweet Potatoes with Pears

I cut this in half and still had plenty for four, now have 3 servings frozen. It was very tasty, I made it as a dry run for turkey day. Will definately make again, but may use less sugar since it seemed plenty sweet when I had just added the pear. Kids loved it. I left the potatoes slightly lumpy and just mashed the pear.

Gourmet Chicken Pizza

All I could think when eating the first piece was "best pizza ever". I made my own dough, used Spectrum Naturals dressing, lowfat mozzarella and added olives. WOW! Next week when I make this again, we are going to add artichoke hearts and maybe a little more sauce. The kid even ate it, which suprised me most. Oh, the chicken I used was done in the crock pot with the Garlic Survival Co's garlic marinade. Super moist and tasty chicken that way.

Apple Brownies

This was very simple to make. Lots of labor chopping apples though. The flavor was ok, the kids did not like at all. I had to cook it much longer than listed. I like the glazed apple cookies from this site much better.

Zucchini Patties

Very tasty. I added a three cheese blend instead of just parm. I also cooked on a cast iron skillet with no added oil. The kids had trouble with them due to the shredded zuc and not able to take bites, but us grown ups really enjoyed them.

Glazed Apple Cookies

Well, I was not sure as this mixed together, but once cooked, WOW! Very good. I did sub flaxmeal for 1/2 the butter and used some 10 grain flour instead of all white, baked at 350 for 15min. Before the last sheet was cool I had started another batch! They are that good. I did use 2 cups apples and added vanilla. With the second batch I also added oatmeal. Very good. I will make these often in the fall. Oh, did not use glaze, they were sweet enough without it.

Sesame Parmesan Zucchini

Very Tasty! I took the advice of others and reduced the olive oil, thank goodness because I thought it was too much even reduced! I have made it several times and am using more sesame oil instead for the flavor and adding more cayenne for the kick. The kids balk sometimes, but us grown ups love it!

Cassie's Zucchini Brownies

WOW! I made the other recipes like this on the site first, what a mistake! This one is so much better. Super rich and tasty. I did follow other reviewers suggestions-adding chocolate chips in the mix and doubled the nuts, then melting chocolate chips on top as a frosting. Super yummy, that did help it from feeling too cakey as others have complained. I also doubled the zuc called for. Absolutely sinful! Already added to the keep forever file. Thanks!

Banana-Zucchini Bread

Great bread, with a few changes. I substitute yogurt or applesauce for the oil, used coconut instead of cranberries, add more banana to replace some of the sugar, and spice it up a bit more. For the flour I have used quinoa, millet, oat bran and multigrain or just wheat instead of white flour to give more nutrition to this bread. Very moist and flavorful even with changes.

Martian Cookies

Awesome! Kids and hubby love them! I made them twice last week, once with just semi-sweet chocolate and the 2nd time with dark chocolate. I spiced them up with cloves and nutmeg and replaced 1/2 butter with flax meal. Also used 2 cups zuchini and no butterscotch chips, but 1 cup of chocolate and only used 1/2 the sugar called for. They were plenty sweet. Thanks!

Zucchini Alfredo

After reading all reviews, and having too much zuc to figure out what to do, made this. Great! I added way more onion and garlic, also 8oz parm. cheese and nutmeg. Whole family loved. I made a double batch yesterday and froze it for later this winter.

Veggie Burgers

Great. I did end up making about 4 times what the recipes called for. I added 8x as much garlic, 4x onion, a little cayene pepper, and MRS Dash original seasoning. Used only zuchini. I did add tofu for protein and used bread crumbs instead of flour. They look like when you put them together, my husband thought I was joking when I said we were going to eat them. But I sprayed tin foil with nonstick and placed on the grill-perfection! Us grownups loved them, kids not sold, but will learn to love em since I am going to make again. My husband suggested a terriyaki sauce with them.

Sugar 'n' Spice Nuts

Great! Very addictive, there goes the diet! I did add 2 cups more nuts than called for, ommited the orange and added cayene pepper. I used pecans, almonds, peanuts, pumpkin seeds, cashews. I made them as a bridal shower gift, were a hit and almost gone before the party ended. I gave the bride the recipe so she was still happy!

Hawaiian Bread I

Easy recipe, I did make changes though. I added flaked coconut along with the extract, oat bran, and 10grain flour for part of the white to add fiber. I also did not use all the sugar called for but added more banana. I do not have a bread machine, so done by hand and in the over, was also worried since it did not rise before baking as others have mentioned. But baked up just fine. Good flavor, it just seems to be missing something-maybe added nuts or another flavor? Will make again. Great starting point. Half of it is gone and it has not even cooled yet!

Simple Whole Wheat Bread

Wow! I read all the reviews before trying this. I used only wheat flour and added 5T gluten, no butter in the bread and 1/3 of the salt. Awesome!!! My husband said it rivaled the bliss of eating ice cream, and that is saying a lot for him! Will make SO many more times, love it.

Enchilada Sauce

Super easy to make, great flavor. Our family does need it MUCH less spicy though. I only used 1/4 cup mixed with diced tomatoes to serve it. Will make many more times just using less chili pepper.

Pumpkin Wheat Honey Muffins

Great recipe. I made some pretty significant changes though. I used applesauce for the oil, no salt, 1/2 of the sugar called for and added 3/4 cup mashed banana. They had wonderful flavor and were very moist. The kids loved them.

Banana Prune Muffins

Great Flavor! I made a few changes-applesauce for the oil, no salt, no baking soda, salt free baking powder, only used 1/4cup white flour-substituting 10 grain, whole wheat, oat bran and wheat germ for the remainder. I also added extra banana-using only very ripe ones. I also used only 1/4cup sugar. They were great. The whole family loves them. I may try next time to use less sugar since the fruits are very sweet alone.

Baked Salmon I

Good fish, the rice was a little too much orange. The aroma was wonderful when cooking. I will make again, only using less orange juice.
