Ground Beef Enchiladas

This is my first attempt at enchiladas, and wow what a fantastic recipe! I adjusted the recipe based on others reviews, I added a can of green chilies and omitted the jalepeno, a diced green pepper along with diced scallions, to the meat. I used reduced sodium taco seasoning, and 12 inch wheat tortillas, as well as low fat sour cream instead of yogurt. I was skeptical about the cream of chicken soup, but this is a must have ingredient. It adds a creamy flavor bomb to the cheese mixture, and it is one of those super secret ingredients that makes this dish fabulous instead of just good. I also used half mozzarella and half Mexican cheese blend shredded cheese. I dipped each tortilla in enchilada sauce before I stuffed them as well. Warning***wet tortillas are a bit messy and slippery! But it is worth it. I fit 6 into a 9 x 13 inch casserole dish that I sprayed with PAM, and dumped the rest of the enchilada sauce over the top. Added a few left over dollops of cheese soup mixture and topped with shredded cheddar. I cooked them for about 30 minutes but might let them go longer even next time. I served these with fresh chopped cilantro and diced roma tomatos sprinkled over the top. My end result resembled something from a high end fancy Mexican restaurant and the taste was out of this world! My husband couldn't stop raving about these! I think this is a great starter recipe, listen to the reviews and you have a recipe that will impress guests and definitely a keeper.

Split Pea Soup

I did make a few changes, suggestions by others, but this soup was WOW fantastic! Super easy too. I used half-water and half chicken broth, added garlic, 2 cups potatos, 2 cups, carrots, 2 cups celery, some garlic and only 2 cups of split peas. I also used a left over ham that was on the bone and still had a good amount of meat. It does take longer to cook than 1 1/2 hours, but over all it was excellent.

Caribbean-Spiced Pork Side Ribs

These were pretty good, I made them in the crock pot using boneless spare ribs, and they did make the house smell wonderful while they were cooking! I thought they were better the second day though, I let the meat sit in the sauce in the fridge over night, then shredded it and placed it on rolls, along with some cheddar cheese and sweet BBQ sauce, placed it in the broiler and WOW! What a sandwich!

Oatmeal Chip Cookies

This is the best oatmeal raisin chocolate chip recipe I have made. Chewy, light, crispy, lovely! I used dark chocolate chips and golden raisins, one thing to remember when making these, be careful removing them from the cookie trays and onto wire racks for cooling. They are very delicate.

Uglies

I used pizza sauce instead of BBQ-mozzerella cheese, and threw in a handful of chopped onion and chopped red peppers to the hamburger mixture. I also used "grands" dough. These came out really good, very light and flaky, tasty, not at all what I expected. I am going to make them again this time using taco seasoning and toppings. The filling possibilities are endless!

Slow Cooker Beef Stroganoff I

This gets five stars because of the other reviewers suggestions-I used London broil cut into cubes, 2 cans of golden mushroom soup, 1/2 packet of dry onion soup mix, 1 1/4 cup beef broth, 1 tablespoon of Worcestershire and 4 ounces of cream cheese. I eliminated the onion, and salt and pepper. Served it over egg noodles and my husband and I loved it. Excellent.

Slow Cooker Salisbury Steak

I didn't care for this-I followed others tips, using Cream Of Mushroom soup, adding some sliced mushrooms and onion....the gravy was excellent, but the "salisbury steaks" just tasted like hamburgers submerged in gravy.

Apple Crisp IV

Overall this was good, but unless you serve this with ice cream or whipped cream-it appears a bit dry compared to other apple crisp recipes. There is no "sauce" really that forms from the apples. Next time I will cut back on the brown sugar in the crumble and add some white sugar directly to the sliced apples like I would for a pie.

Marinade for Steak I

I used this marinade on some london broil I had cut up into bite size pieces for kabobs, it sat in the marinade for two days in the fridge and it came out fantastic. My hubby who is the grill master of the house-didn't even request any sort of steak sauce or BBQ sauce to put on the kabobs. The marinade was just perfect. I did dice the onion but that was the only change I made. GREAT marinade!

Florentine Artichoke Dip

This was excellent and exactly what i was looking for, I did make a couple changes I used 1 package of cream cheese instead of two, and sprinkled finely grated swiss cheese on the top before placing it in the oven. Tastes like it came from a restaurant!

This came out fantastic-I can see where there is alot of room to experiment with this recipe too by using different chips, filling, etc...I used regular semi-sweet choclate chips but next time I might try white chocolate chips. very very good...

Slovak Stuffed Cabbage

I never made stuffed cabbage before, this recipe was my first try and it was easy and delicious. I omitted the sugar and the bacon-and didn't miss them. My husband said they tasted like his grandmother's stuffed cabbage! Excellent!

Blueberry Pie

I made this several times, and my only complaint is how runny the filling is. The taste is great! I did add 1 teaspoon of vanilla, 1 teaspoon of almond extract and MORE cornstarch (5 tablespoons) and I boiled the filling as others have suggested. I used a spoon to remove the filling from the pot, and this helped cut out some of the excess liquid.

Pasta Lasagna

This gets 5 stars for flavor,and 5 stars for the low cost but I have to rate it four stars for originality. This came out like baked ziti with penne noodles. I did cook a diced onion, garlic and red pepper in some olive oil first and add it to the sauce. I also doubled the recipe and we ate it for dinner 5 days in a row. No one complained everyone loved it.

Marinated Spicy Pork Chops

Chocolate Eclair Cake

This was very good and I would of rated it 5 stars-but I think some of the ingredient amounts were off. I used two packages of instant vanilla pudding (they are 1.5 ounce boxes)each called for 2 cups of milk so I figured this was the correct amount, I also used an 8 ounce container of whipped topping. This was the perfect amount, using 16 ounces would of taken away from the vanilla flavor and been to whipped cream tasting for me. The end result was GREAT. Then my husband covered it with saran wrap and put it in the fridge. Well the next day, removing the saran wrap removed the majority of the frosting! The leftovers were sloppy and chocolate-less. I would suggest to put some toothpicks in it and "tent" a piece of foil over it for storage.

My Kid's Favorite Pork Chops

I have made this recipe two nights in a row because my husband can't get enough! I didn't have any BBQ sauce so I took the advice of another reviewer and made my own with ketchup, worcestshire sauce, brown sugar, dijon mustard and a dab of hot sauce. Also added a clove of minced garlic, and a handful of chopped celery and carrots. I used a can of Canadian beer, and a sprinkle of thyme. WOW! I uncovered it the last 20 minutes of cooking so the sauce would thicken. Excellent!

White Bean 'n' Ham Soup

This is my first attempt at homemade soup and it came out fantastic! I made changes as others suggested though, used low sodium chicken broth instead of water, added celery and minced garlic to the carrot-onion saute', I used dry beans that I soaked over night, and didn't bother mashing any. I cooked this covered for about two hours. My husband could not stop raving about this recipe, will be making again!
