Easy Chicken Enchiladas

Reviewed: Oct. 30, 2012
Loved this recipe. As far as I am concerned, anything with cream cheese is excellant. Leftovers were even better.

Hot German Potato Salad III

Reviewed: Oct. 30, 2012
This is a very good recipe. It gets 4.5 stars as written. I used half the potatos called for because it was just the 2 of us. Definitely use reds. Did not halve the sauce ingredients as suggested by others. The next time I make it I will increase the sauce ingredients even more because my husband compares every German Potato Salad recipe I make, to the canned version, because that is his fav. This recipe is really a wonderful fresh version of that. We both really liked it. I will never have to eat the canned again!

Alfredo Shrimp with Angel Hair Pasta

Reviewed: Feb. 7, 2012
Had to use fettuccini since that is all I had. This was excellent. Soaking the shrimp in butter was definitely the key. Shrimp wasn't rubbery even when it was reheated as a leftover. Will definitely make again and will probably soak the shrimp in butter for any other recipe I use that calls for shrimp.

Mouse's Macaroni and Cheese

Reviewed: Oct. 19, 2011
My grandson requested macaroni and cheese for his 4th b-day dinner. I added cubed ham to make it an entree. Many complements by all. Awesome. Thanks Mouse

Frozen Mojito

Reviewed: Sep. 1, 2011
I have been making this recipe for several years. They have become my signature drink. My frozen mojitos have been so enjoyed that we now have "Mojito Sunday" at the pool as often as possible. Hate to see the summer coming to a close...

Zucchini Patties

Reviewed: Aug. 1, 2011
Yum. Made just as written, but sauted onions. Neither my husband or myself like to crunch into onions. When they were reheated the next, they were not crispy of course, but they were quiche-like. I am sure I will make again and again.

Zucchini with Pecans

Reviewed: Jul. 19, 2011
I really enjoyed this. My husband thought it was a little bland. I used chopped garlic from a jar. I also added more pecans. His only complaint that it was too bland. I am sure if I use butter instead of oil he will like it a whole bunch more.

Orzo with Parmesan and Basil

Very very good. Did not add salt and pepper as it did not need it. Used half butter and half EVOO. Will use less next time. Thanks for sharing

Oops. I goofed! It should read: if dough is too dry, add a few drops of water.

Turtle Cake I

Reviewed: Apr. 11, 2011
DO NOT USE A BUNDT PAN! My son requests this ever year for his birthday. In order to change it up, I decided to make it in a bundt pan. Do not, I repeat do not, attempt this. When I tried to remove it from the pan, the lower portion of the cake slid right out. So I had that portion and the gooey middle on the plate and the top half, the portion in the bottom of the pan, stuck. I tried to use a steamy towel to no avail. Fortunately I reserved some of the caramel sauce and used it and some pecans and chocolate chips as well to hide the boondoggle. Thank goodness this was for a family event! That said, as always, this is a family favorite and the mess was totally my fault for trying to be creative!

S.O.P.P.

I made exactly as written. It is a quick and hearty entree. I especially like how the potatoes get browned while cooking. My husband does not like green peppers but he can easily pick them out of this dish!

Cajun Spice Mix

Reviewed: Feb. 15, 2011
Made this exactly as printed. Since I had everything in stock, I didn't have to make any changes. When I make it again, I may substitute smoked paprika since I had to buy it for another recipe and haven't had much use for it since.

Cindy's Jambalaya

Reviewed: Feb. 15, 2011
I loved it. I cut the recipe to 4, but used the full amounts of sausage and shrimp. Otherwise, I think it would have been lacking. I also used the Cajun seasoning recipe on this site.

Macaroons

Delish. Made these for a party. Fortunately or unfortunately, only 2 of us like coconut so between the two of use we nearly wiped them out. Impossible to resist and so simple. Much less messy than eating the coconut straight out of the bag!

Cream Cheese Penguins

Reviewed: Dec. 30, 2010
These are great. I too used the cream cheese in a baggie idea and it made filling the "colossal" olives so easy. The most difficult part for me was putting the little "noses" on the smaller olive! I waited till the last minute to get party toothpicks and the store was out, so I glued little pom poms on regular ones. (Imagine that 8:00 on Christmas eve and they were out!) I will probably make these again for a New Years Eve party

I made this last night and plan to share as Christmas presents to family members. It is sooooo easy. I did the same thing with a Chai tea recipe of couple of years ago. This is much easier and just as good if not better. Thanks

Strawberry Spinach Salad I

Reviewed: Sep. 8, 2010
We loved this recipe. My step-daughter and I made this together. She has come cooking experience and I wanted her to have a little more so I was her "sous chef" We had guests, so we doubled the spinach (baby, because I am lazy), strawberries and almonds (used sliced) but only made 1.5 the dressing. Had plenty left over. We did not dress the salad until right before serving and topped with feta cheese as suggested. Her grandparents, who are pretty traditional eaters, really liked it as well. I look forward to making it again. p.s. My daughter is rapidly becoming an All-recipes.com addict like me!
