Carrot Cake III
I made this carrot cake for my husband's birthday a few days ago. My first cake from scratch. Everyone at the party loved it and I have to say so did I! I made two 9'' rounds. The only change I would make next time is double the frosting. It got pretty thin as I was icing the outside. I like this recipe as is...they only things I did differently were: I squeezed excess water out of grated carrots in cheese cloth to prevent too much moisture in cake. I did 1/2 brown sugar and 1/2 white. I subbed raisins for the nuts in the cake and re-hydrated them in some warm water before adding. The frosting was sweet enough for me after 3 1/2 cups of sugar. Delicious and will definitely make again! Crowd pleaser!!

Stuffed Eggplant with Shrimp and Basil
I made this for dinner tonight and my husband and I loved it! It was so creative and tasty! However, we didn't really taste the basil flavor too much. Next time I will increase the basil amount! Will make again! :)

Mahi Mahi with Coconut Rice and Mango Salsa
This dish was excellent. The marinade was right on...however I did reduce the red pepper flakes to 1/8 tsp. and I marinated the fish overnight instead of 1 hour. I made the rice with 2 cups of homemade chicken stock rather than the water and bouillon cube, but everything else the same- fantastic! For the salsa, I diced up fresh mango and mixed it with cilantro, red onion, poblano pepper, salt and lime juice. This dish is a wonderful blend of flavors and textures, and is also pleasing to the eye! Will make again!!
