Cranberry Sauce Chicken II

Reviewed: May 23, 2011
I give this five stars, because it is so easy! I used Light Done Right Catilina and whole berry cranberries. I was reluctant, but it lived up to the hype. My husband (who usually wrinkles his nose to chicken) loved it. I served with roasted sweet potatoes that I tossed in chicken broth, a touch of olive oil and another packet of onion soup mix. It was fabulous.

Italian Dressing Mix

Reviewed: Jul. 11, 2010
As written this is WAY too salty. If I make it again, I will probably eliminate the 2 T of salt all together. Seriously, I wonder if 2 T of salt maybe isn't a misprint. It is very overwhelming.

Broiled Tilapia Parmesan

I followed the suggestion of another reviewer and added 1/2 cup of bread crumbs to the topping. This was soooo good. People who weren't fish lovers really enjoyed it too.

Interesting flavors...I loved it. Others at the table weren't as impressed.

Hot Fudge Ice Cream Bar Dessert

Very easy and yet so tasty. I think there are many possibilities here. Caramel instead of PB...add crushed oreos to the chocolate. Yumm

New Orleans Shrimp Toss

Reviewed: Apr. 12, 2010
This meal is VERY tasty! I read a few reviews where people didn't use the Cream of Chicken and herb soup and replaced with regular cream of chicken....and I would highly recommend not doing that! It adds flavor. Furthermore, I first had this at a friends and have made it a few times since - it is certainly best over cornbread or biscuits to sort of sop up the sauce. If you want it over rice or pasta - try adding a little cornstarch to it.

Hot Bacon Dressing

Reviewed: Apr. 12, 2010
Very much like the dressing on Applebee's Spinach and Shrimp salad. I used Roasted Red Peppers instead of pimentos...and actually I subbed different vinegars cause I didn't have cider vinegar like I thought. The flavor was great. It would be easy to make this a little more calorie friendly by using turkey bacon and even spleda to sweeten. Great dressing.

Sopapilla Cheesecake Pie

Yum! I love this stuff. I have made simliar recipes in the past, but I loved the addition of the honey. With a scoop of vanilla ice cream, this is to die for hot out of the oven!

Jeff's Chili Con Queso

Reviewed: Mar. 11, 2010
good flavors...I spiced it up a little more than the recipe called for, but I would suggest using just velveeta. I really didn't think the cheddar melted too smoothly. It was just a strange texture for me.

Ground Beef Enchiladas

Reviewed: Mar. 11, 2010
I really like this recipe. I was scared by the chicken soup mixed with beef, but it makes a really yummy creamy sauce. I do like to jazz it up a little. In the meat mixture, I add corn and a can of diced tomatoes and jalapeno instead of just the jalapeno. It has been a hit when I share it with friends. Very tasty given its simplicity.

Greek Chicken Pasta

Reviewed: Feb. 26, 2010
It was good, but not as flavorful as I was expecting. Maybe I should have used "marinated" artichokes as recommended, but I didn't want to add the calories. Don't get me wrong this was tasty - I just think I will add a few more spices next time. It really needed quite a bit of salt.

Easy Herb Roasted Turkey

Reviewed: Feb. 25, 2010
It was good, but it seemed awfully involved and truly...the turkey ended up tasting like, well, turkey. It didn't seem a lot different than what I grew up on, but it did smell wonderful and the skin browned beautifully.

Easy Beer Bread Mix

I am not a bread maker, but this was soooo easy! It was a great, easy appetizer when I cut out the center to make a bread bowl and filled it with spinach artichoke dip! Will do this one again for sure. (I used Fat Tire beer...)

Crab Dip

Reviewed: Feb. 25, 2010
This was ok for me, but everyone else I served it to loved it. I added a couple splenda packets...I guess I was wanting a crab rangoon taste to it, and I didn't quite get there until I added a touch of sweet.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Feb. 25, 2010
I was skeptical - but the rating convinced me to try it. The flavor was surprisingly good. I used Whiskey Creek BBQ (Chipotle Lime) and I am sure that made a difference. It was a little "soupy" for just a sandwich, but on a potato as recommended, it was perfect! Thanks for a quick, easy, and yummy recipe! We'll certainly make this a staple, go-to recipe :)

Double Layer Pumpkin Cheesecake

Reviewed: Dec. 7, 2009
My husband begs for this recipe around the holidays. I followed someone's suggestion the last time I made it - I doubled the cream cheese mixture and pumpkin mixture. It turned out great! I will make this year after year if my husband has anything to say about it!
