Irish Potato Candy

These are so cool! They were a breeze to make, and I even made them vegan, using vegan "Cream Cheeze" and vegan "butter" sticks. Since my Kitchen-Aid mixer was otherwise occupied, I mixed the ingredients together by hand, wearing gloves, and that added to the fun of making these treats. They are just SO cute! They are REALLY rich and sweet, so you only need one, ha ha. They were a big hit at my small family St. Patrick's Day Dinner, and I'll be making them every year, I think. Wish I had taken photos to add to the others, but mine looked just as good as all of the other submissions.

Blueberry Crumb Pie

This was fantastic! I had to almost fight my relatives so I could get a serving myself :) I skipped the lemon zest accidentally, but had no complaints. Delicious and much "lighter" than the standard double crust/lattice blueberry pie. The crumble topping was just beautiful and really looked "creative".

Butter Flaky Pie Crust

I loved the ease and flavor of this crust recipe (I make only butter or TF-free margarine crusts), but it did seem to be a bit greasy to me. Could be the pie recipe instructions I was using too. As one reviewer suggested, I grated hard frozen butter, and then incorporated it as instructed (that was fun!). Maybe I'm just not used to a crust with a delicious whole stick of butter :) I usually make a "low fat" crust, using just a tbsp or two of light margarine, so it's thinner/crisper, and shrinks annoyingly. A+ for taste, but maybe a little less butter is needed? I'll experiment. **UPDATE 7/10 - I made this again and did NOT grate the butter (just chopped it in the food processor w/the flour and stuff) and it came out WONDERFUL! Created gorgeous double-crust and single crust pies. This is my ONLY pie crust recipe from now on :)

Chocolate Oatmeal Cookies

This is a GREAT and more healthful cookie recipe! I add cinnamon, as it's so nice with oatmeal and the richness of the chocolate. I do use butter instead of margarine, and dark chocolate chips (just b/c these items are a little healthier), but it's a perfect recipe :) A standard in my house.

Juicy Roasted Chicken

Excellent! Moist and flavorful! Great basic recipe! Easy to add/change flavors to suit tastes. I made some minor changes (added lemon and onion to the cavity w/the celery, rubbed w/olive oil instead of margarine, and used lemon-pepper salt-free seasoning inside & out), and it was just so lovely. Made 2 whole chickens for a group and there were fights over leftovers :)

The Best Red Enchilada Sauce

This was very, very good! My sauce came out much darker than the photo, but I'm not sure that my dried chiles were anchos, and that's not a complaint in any event :) I used this on chicken enchiladas, and it was a hit! My brother in law even said it was better than my mother's, and she's an AMAZING cook who makes everything from scratch. No longer will I use nasty, sodium-filled canned sauce!

Strawberry Meringue Cups

This recipe came out BEAUTIFULLY. I followed the directions exactly, except that I made two giant cups (aka Pavlovas). They were gorgeous and delicious. I topped them with strawberries and whipped cream as suggested, but any fruit or even a mousse would be awesome. I made these for my sister, who is gluten-intolerant, and could not partake my strawberry pie. This recipe made sure she wasn't left out. Humidity wasn't an issue for me, as I live in the Mountain West.

Sopapilla Cheesecake

This is absolutely AMAZING. A++++! I also found the one package of cream cheese, after whipping, to be plenty, but I added cinnamon to the filling too, because I love it. I'll admit that it was a little challenging to roll out the crescent roll dough and transfer it to the pan in once piece (I also rolled them out in powdered sugar and not flour), but I think it's that the "generic"/store brand crescent rolls I used aren't as good as brand name (Pillsbury doesn't separate as much when using it for baking purposes, I've found). It was SO good, I sent leftovers to husband's work and relatives, as a whole pan is quite dangerous for two :) This would be a good easy cinnamon roll substitute for brunches and other morning events too! YUM!
