Casseroles of any theme/cuisine (Mexican, Italian, etc.), Egg/Veggie scrambles & frittatas, Spinach Quesadillas, Tofu or Chicken stir-fries, anything in the crockpot

My mom is a fantastic and inventive home cook--we always had wonderful vegetarian casseroles & "made up" meatless recipes, baked goods of all kinds, but especially muffins, breads, and cookies

Overcame my fear of handling raw poultry in 2001 (raised vegetarian),
Tackled puff pastry in 2010,
Realizing I don't always need a recipe to make a delicious meal, that I can invent them myself.
My cooking tragedies
Removing membranes/seeds from jalapenos with my bare, ungloved hands. Won't do that again!
