Soft Dinner Rolls

These are awesome! Forgot to brush with butter but they still browned up nice. They're very soft, light and fluffy, and have a good flavor.

Norwegian Almond Cake

This cake is AWESOME. I had high hopes for it after I sample the still warm custard topping but the finished product more that surpassed my expectations. This will definitely be among future holiday sweets.

Too Much Chocolate Cake

Melt - In - Your - Mouth Shortbread

These really do melt in your mouth. I drizzled mine with icing to make them slightly sweet. I did have trouble with the bottoms browning up to much. Next time may lower oven temp to 350 degrees F. and/or try a different baking sheet.

I have made this several times & LOVE IT. The only change I make is to sear the pork in either 1-2 Tbsp. of butter or vegetable oil. And I usually double the recipe.

I'm not a big scalloped corn fan but I did like this recipe. Not sure I'll be making it again but if I did I think I would use fresh or frozen corn instead of canned.

Goat Cheese Arugula Pizza - No Red Sauce!

I used flatbread for a crust so reduced the other ingredients by about 1/3 to accommodate the smaller sized crust. A nice change from regular pizza.

Chorizo and Lentil Stew

I didn't follow the recipe exactly. Ended up using Italian sausage instead of chorizo and used a pound of meat. Used about half the amount of celery and added half a diced onion. Also added 2 cut up roma tomatoes and a couple handfuls of baby greens at the end. I used 4 cups of chicken broth and 1 cup of water. I did stay true to the amount of lentils and seasonings. The seasonings were perfect and I really enjoyed this dish.

Grilled Chicken Thighs Tandoori

I ended up not grilling out so I cooked the marinaded chicken in a crockpot (I have no doubt that this would have been better on the grill). Is great served with pineapple rice.

Red Garlic Mashed Potatoes

These had a nice flavor. I didn't add garlic to potato water, just pressed about 2 teaspoons worth before mashing. Only added about half (a little less than half) the amount of sugar. Added salt. Will be making these again. The flavor is going to vary somewhat, I think, depending on which brand of steak seasoning you use (I used Famous Dave's).

Yummy No-Bake Cinnamon Rolls for Kids

A nice change up from cinnamon toast. Easy and fun for the kids to make. I used a lot less of the butter, cinnamon sugar and confectioner's sugar, more like 2 teaspoons of each instead of tablespoons. Would be good with cream cheese also.

Spiced Sweet Roasted Red Pepper Hummus

This was very good. I had never tried hummus so I have nothing to compare it to. Very nice red pepper flavor with just the right amount of kick from the cayenne. It was kind of grainy so I wonder if I didn't process it enough.
