Chili Relleno Casserole

This would have five stars except that I seriously cut back the cheese from the recipe. I used a little more than 1/3 the cheese that was called for. It was FANTASTIC! But seriously, 2 lbs of cheese? If I had made it with that much cheese, I think I would have given it a 2.

Fresh Southern Peach Cobbler

The filling has a great consistency. I added some fresh minced ginger. The topping has a bit too much salt for me. Next time I will cut the salt in half.

Corn Chowder

This was a good corn chowder recipe. We added extra carrots, celery and onions. Instead of water, our starting liquid was stock from a ham bone in the crockpot cooked overnight. It made an excellent addition to the overall flavor.

Ten Minute Enchilada Sauce

My family did not like this at all. We make corn tortilla enchiladas about once a week, so I thought I would give this a try. Way too much chili powder and not enough flavor. I will not be making this again.

Charline's Sweet Potato Casserole

I made two changes to this recipe. I don't care for coconut, so I omitted it and to account for the change I doubled the amount of sweet potatoes. I generally don't care for sweet potatoes, and this casserole blew me away! It is SO yummy! It will be a family favorite for years to come, I'm sure!!

Soft Sugar Cookies V

These cookies were great!! I stuck them in the freezer to chill for about 45 minutes and used powdered sugar to help roll them out. I added a bit more vanilla than called for and also put about 2 tablespoons of zested orange peel. They were so tasty and sweet we didn't even frost them, but a cranberry frosting would be awesome with the orange peel, I'm sure. I might cut the sugar back a bit next time and frost them.

Easy Peach Crisp II

This needed more peaches than the recipe calls for. Instead of almond extract (I'm allergic) I added vanilla, cinnamon, a squeeze of orange juice and a bit of flour to the peaches. I made the crisp with half flour and half oatmeal, which I thought was great. Next time I will double the cinnamon and add half of the amount of sugar it called for--This was entirely too sweet.\

Quick Yeast Rolls

These are the best rolls I've ever made, and I know it has everything to do with the recipe. I loved that there was no kneading involved as that is my least favorite part of bread making. I only changed one small thing. I added a 1/4 c extra flour to make it easier to handle. I'll definitely by using this recipe again!!

Vanilla Pumpkin Pie

Wonton Soup

The only things I changed was that I used chicken instead of pork because that's what I had in my freezer. This was so good and my husband and I had so much fun making them!! I had a feeling I would love it, so I made double the filling so I could feeze it and make them again another time (I didn't really want to sit around for hours making 200 wontons). I'm excited to thaw the filling out and make some more another time.

Pumpkin Roll Cake

I didn't have the correct size pan, so my roll was a little thin. Even so, it was still great. I also didn't use any nuts. Taste was fatastic, but due to the incorrect pan size, it cracked a bit. I'll have to try again with the right size pan. It was so good!

Ravishing Red Velvet Cake

Great Cake. I am notorious for over baking and it was still pretty moist and delicious! Instead of buying buttermilk, I added a tbs of vinegar to regular milkas. It worked out great. Also, instead of getting butter flavor, I used butter flavored shortening.
