Crispy Potato Pancakes

I was looking for a way to spruce up leftover mashed potatoes to I tried this out. My potatoes were made with unpeeled redskin potatoes, some milk and margarine and just roughly mashed with a masher. On a scale of 1 to 10 of liquidy potatoes, mine were at a 2. They were leftovers, so I took them out and used a paper towel to lightly get any moisture off of them. I added the rest of the ingredients of the recipe and they really turned out great! I topped them with shredded colby jack cheese and some French's fried onions.

Country Green Beans

I was looking for a way to doctor up some canned green beans. I took 2 large cans of green beans, kept everything else the same except doing 4 slices of bacon and adding the grease. They were awesome, will do again!

Baked Ziti I

I really liked this recipe, because I am not a huge fan of ricotta, but I appreciate its purpose! I did mix the sour cream with the pasta just for the ease of it and so it would mix well. This is a great recipe and I realized I need to start making it in a bigger pan!:)

No Bake Peanut Butter Pie

Jalapeno Popper Spread

Like others, I used 4oz jalapenos, threw some shredded parm and cheddar in the mix and topped it with panko crumbs/parm and baked it. It was really good, I got some good reviews on it, but it didn't WOW them. I will definitely make it again and give it another try, but for now my heart is with The World's Best Bacon Cheese Dip (on here) as the big crowd pleaser!

Ashley's Chocolate Chip Cookies

This recipe really works for me! First, it is easy and fast! Of course, I had to do some tinkering... I changed the servings to 48 so that I would use 2 sticks of butter (ocd thing I guess...:). This made it so that it asks for 1 1/3 egg, but I put 2 in. Also, it then asks for 2 2/3 c chips, but a bag is 2 c, so I put a whole bag and then 2/3 c finely-ish chopped walnuts. At this point I ask myself if I should just use the original quantity and forget about the not-even-butter-stick thing...:) But, these cookies turn out great, they are light and fluffy, and a little cake-like, the way that I like them. Whenever I follow the Toll House recipe, they always come out flat as a pancake and borderline overcooked. I love these, and they got great reviews from all of the people that tried them!

World's Best Bacon Cheese Dip

This recipe is just amazing!! I get raves whenever I take it anywhere, and it is quickly becoming my go-to dish for parties. I have used the "real bacon" pieces that come in a zipped bag instead of freshly-cooked bacon and it is fine, even though fresh is better. I have also used sliced swiss cheese and layered it in the dish and that didn't work out as well, but I was trying to not have to shred the swiss blocks. Sargento makes a shredded swiss, but besides that it is hard to find. Also, I have now substituted the mayo for sour cream (can be light). It isn't half as greasy and it is just as good! I love this dip!!
