Chicken Salad with Bacon, Lettuce, and Tomato

I really enjoyed this salad, especially with fresh garden tomatoes and the avocado in it! The Worcestershire sauce jazzes up the mayo dressing just a little bit. It was a light, refreshing lunch and uses ingredients that most people have on hand. Only thing I omitted was the celery.

Cream Puffs

Yum! These turned out delicious! I actually had my husband buy me a cake decorating bag/kit for Christmas so I can make these again and pipe the filling in instead of cutting them as I had to do the first time. Everyone loved the final product and I had no problems baking them. Next time I will try the white chocolate pudding filling some have suggested. Great recipe.

Quick Yeast Rolls

These were fast (as rolls go), easy, and delicious. My kids' only complaint was that there weren't enough! I followed the recipe ingredients exactly, which makes for a very wet dough, but works perfectly. I mixed in the kitchen aid for about 3-4 minutes once I added the flour, and then let rise about 45 minutes. Then I used a greased ice cream scoop to scoop dough into greased cupcake pan. (This recipe made 12 rolls for me.) I let rise about 30 more minutes, and then baked at 425 degrees for 10 minutes. Perfect:) Will definitely make again!

Peg's Summer Squash Bake

My husband and I really liked this. I did modify it a little, but just by adding a few spices. I used a little bit of garlic salt sprinkled over the squash, as well as some cracked black pepper. I spread the zucchini in a single layer on the pan, but with a little bit of overlap so I could fit more squash in. Yum!

Sopapilla Cheesecake Pie

Yum! If you like cheesecake, you'll like this. The cinnamon sugar topping was pretty sweet, but everyone loved it. I liked it warm better than cold. Tastes sort of like a cheese danish but with extra sugar on top.

Award Winning Soft Chocolate Chip Cookies

Really yummy cookie. Crunchy on outside and soft and moist on the inside. Baked at 325 since my oven seems to run a little hot. Halved the recipe and it still made 60 cookies. Added 1/2 tsp salt and a little extra vanilla. These were great.

Pretzel Turtles

Lemon Icing

Great, easy recipe. Not too overwhelmingly lemony. Add more lemon juice if you want a strong lemon taste. I left out about a quarter cup of the sugar since I wanted it a little less sweet and a little thinner. Whipped with mixer to perfect consistency.

Cranberry Pistachio Biscotti

YUM! These were very easy to make and very delicious! I did make a few alterations to them: 1. Used margarine because I didn't have any light olive oil. 2. Added a tbsp of orange zest 3. Rolled cut edges in sugar before second baking. Wonderful flavor. Next time will add chopped dried apricots. I only got about 2 dozen cookies, not 3.

Pumpkin Roll Cake

Absolutely delicious! I followed the recipe exactly and used pillowcases to roll up the hot cake. Once in a while I had a little part crack on me, but nothing major at all and when you add the filling and re-roll you can't even tell. I've made these twice now for major family holiday events, and they swear this is what I'll be assigned to bring every year now. YUM! Thnaks for the recipe!

Delicious Ham and Potato Soup

Delicious! Rich and creamy without needing cream or half and half or any of those ingredients often in cream soups that I don't keep on hand. My only suggestion is to cut down on the salt a little bit. Other than that, it was perfect! UPDATE: We've made this multiple times now, and we've found that omitting the extra salt completely, and cutting down the pepper to 3/4 tsp works best for our family (kids couldn't handle a whole tsp.)

Pumpkin Casserole

This was really good- on par with sweet potato casserole. I cut back on the sugar per other reviewers' comments, and added only 1/2c brown sugar instead of 1 c white. I also didn't have self rising flour, so I just used regular flour plus baking soda and baking powder. I was happily impressed at how this turned out. Will make again at holiday time.

Tasty Baked Meatballs

These are very good meatballs! Even my kids were snitching them off the baking sheet because they liked them so much. I have made them twice now, once as written and once without the cream of mushroom but with some milk and extra seasonings and they were delicious both ways. I will definitely be making these again!

Thin Mint Crackers

yum! Just like thin mints except for a little too much salt, maybe. I just used melted andes and ritz. Also tried nilla wafers, but we liked ritz the best for the texture like a girl scout cookie.

Slow-Cooked Corn Chowder

My family loves this recipe for fall or winter days. Super easy and super tasty. I've made it exactly as written, but my family prefers fresh potatoes instead of frozen ones, so I just dice up a few potatoes and throw them in. Delicious!

Sue's Hot Fudge Sauce

Yum! Easy to make and thickened nicely once cooled. I did add extra cocoa per other reviewers' suggestions, but did everything else as stated. I probably added almost 2/3 cup of cocoa and it was delicious!

Curried Coconut Chicken

This was simple to make and I was shocked that my entire family loved it- even the kids! I used lowfat coconut milk (because it was on sale:)) and it still thickened up and was delicious. The only other ingredient I changed was to use thai red curry paste instead of curry powder, because I had it on hand. I used about a tbsp and a half instead of 2 tbsp because I was worried about it being too spicy for the kids, but it wasn't even close to being too spicy so I think I could have used the full amount. I simmered it uncovered for about one hour. Everyone loved it and asked for it to be added to the recipe list we pull from when making our menus each week. Thanks for the great recipe!
