Broiled Tilapia Parmesan

I thought the flavor of the topping was good, but very strong. It definitely overpowered the fish. My husband and I ate it, but the kids hated it and asked for straight butter/salt/pepper next time. I won't make again.

Salsa Chicken Rice Casserole

The whole family enjoyed this dish. I mixed the cheese in with the soups and just used a little less tan called for and then sprinkled the extra on top. It's not the most beautiful casserole (it looks like mush:)) but it tasted good.

Gravy Baked Pork Chops

We really liked these pork chops as a change from our usual fare. I browned the chops in the butter with some garlic thrown in for more flavor. I also sprinkled them with onion powder before adding the soup mixture. Also added one can of mushrooms. The whole family enjoyed!

Meatloaf with Sour Cream Sauce

The adults in the family really liked the variation on traditional meatloaf. The kids, however, didn't love it. Ours was pretty soft and mushy on the inside, though, even though I followed the recipe exactly and used the meat thermometer to test if it was done. In the future I would add more crackers or bread crumbs or cut down on the salsa a little to "firm it up."

Curried Coconut Chicken

This was simple to make and I was shocked that my entire family loved it- even the kids! I used lowfat coconut milk (because it was on sale:)) and it still thickened up and was delicious. The only other ingredient I changed was to use thai red curry paste instead of curry powder, because I had it on hand. I used about a tbsp and a half instead of 2 tbsp because I was worried about it being too spicy for the kids, but it wasn't even close to being too spicy so I think I could have used the full amount. I simmered it uncovered for about one hour. Everyone loved it and asked for it to be added to the recipe list we pull from when making our menus each week. Thanks for the great recipe!

Sue's Hot Fudge Sauce

Yum! Easy to make and thickened nicely once cooled. I did add extra cocoa per other reviewers' suggestions, but did everything else as stated. I probably added almost 2/3 cup of cocoa and it was delicious!

Orange Crunch Cake

We liked the cake and especially found the crunch layer to be a nice touch. The frosting however didn't taste good to any of us. If I made again I'd use a different frosting recipe for sure!

Bunny Cookies

Fine sugar cookie. A little more crunchy, less soft consistency than some other recipes. We frosted ours and the orange flavor didn't come through at all. Basically I'd say a regular sugar cookie recipe, nothing extraordinary.

Golden Knots

These rolls had a good taste and were pretty easy to make, however mine spread out too much for me instead of puffing up. I did just try to make them into rolls instead of tying the knots (to save time,) but others said they did this and seemed happy with their results... I'm not sure if I did something wrong? Anyway, next time I'd bake them in muffin tins so the roll couldn't spread so much, and I bet I'd give them a higher rating then. Thanks for the recipe.

Butterscotch Gingerbread Cookies

These were a pretty good, different tasting cookie than our normal fare. Everyone in the family liked them well enough, although no one was raving about them. They spread out a bit more than I expected, so if I make again I think I'd chill the dough a little before baking.

Luck o' the Irish Brownie

Brownies were rich and delicious, but with added mint and chocolate topping they were too rich and sugary for half of my family's tastes. I liked them, but you can only eat small squares at a time.

Delicious Ham and Potato Soup

Delicious! Rich and creamy without needing cream or half and half or any of those ingredients often in cream soups that I don't keep on hand. My only suggestion is to cut down on the salt a little bit. Other than that, it was perfect! UPDATE: We've made this multiple times now, and we've found that omitting the extra salt completely, and cutting down the pepper to 3/4 tsp works best for our family (kids couldn't handle a whole tsp.)
