Apricot-Glazed Pork Chops

Eclairs II

These turned out delicious with Martha Stewart's pastry cream recipe. Double batter to use up all the pastry cream. Made mini eClair's 1/2 inch by 2 inch in size. 10 minutes or so at high temperature and 20 at low temperature. Check after 5 and 15 minutes to make sure not getting too brown.

Allie's Awesome Easy Spice Cake

I made this today, using a quart sized jar of homemade apple pie filling. I have no idea if that is equivalent to the amount of canned filling called for. (Anyone else know?) I baked it for 52 minutes, as my oven usually cooks a little hot. As I made it, it was slightly sticky, especially where an apple chunk was, but very delicious. I will definitely make again, although I will try baking it a tad bit longer, maybe 55 minutes. Also, I greased and floured my bunds pan and didn't have any of the sticking problems others mentioned, so I will definitely flour again in the future. Everyone loved this. Thanks!

Brown Sugar Meatloaf

This was good. I substituted seasoned bread crumbs for the crackers, dry onion soup for the onion, and cut the brown sugar to 1/4 cup. I used 2lbs of ground beef, and kept the eggs and milk amts the same. I added a tbsp of Worcestershire to the ketchup and brown sugar, and just added the glaze to the top for the last 15 min of baking. Meat loaf is probably never going to earn 5 stars from me- it just is not that exciting. But this was a good, solid recipe I will use again.

Navajo Fry Bread II

Good recipe, as long as you change the salt to 1-2 teaspoons. May need more flour so it is not too sticky. Great as base for tacos.

Italian Breaded Pork Chops

We really like this recipe, and it is fairly quick to prepare. The egg/breading ratio to chops is way off, though. 1/3 of each is plenty for 5 smallish chops, which is what my family needs. I halved it tonight, and still threw out a ton of extra breading:( Anyway, the only change was adding garlic powder and italian seasoning to the breadcrumb mixture (abt 1/2 tsp each for half the breading), negating the need to add fresh garlic to the oil. I cooked abt 2-3 min per side in oil, then out on rack over a cookie sheet to bake in oven for 25 min. Yum!

Slow Cooker Chicken Stroganoff

This was fine, and it was nice for a change, but we didn't love it. I prefer my chicken diced, not shredded, and cooking in a slow cooker so long made it all just shred apart when stirring in the cream cheese. I added mushrooms, which was a nice addition. I doubt I will make this again.

This was fine, but lacked something. I used dried ginger, so maybe that was why. It kind of tasted like just a beef gravy... Next time I will try adding the cayenne others suggested.

Black Bean and Salsa Soup

My family and I really enjoyed this recipe. I love that it is quick and easy. I made a few additions based on others' comments. For my family of six I doubled the recipe, and left 2 cans of beans whole to add texture. I sauteed 1 1/2 -2 tbsp garlic in a little olive oil, then added the blended and other ingredients to the pot. I used 3 tsp (1 tbsp) of cumin, a generous dash of onion powder, and also added about 1 1/2 c of frozen corn. Just before serving I added 1 1/2 Tbsp of lime juice. I served it with sour cream and quesadillas, and we will definitely make this again.

Jay's Signature Pizza Crust

This was a good pizza crust. I baked on a greased insulated cookie sheet and it crisped up nicely. After leaving on the pan throughout dinner, though, the pizza got increasingly softer. Maybe next time I'll put it on a cookie rack to cool so it will stay crispy. I cooked it without toppings for 7min, then added toppings and baked for another 8 or 9 or so.

Grandma's Chicken Chardon

I made this for dinner tonight and thought it was very good. I only used 4 chicken breasts but kept the other mixtures the same. Next time I'd halve the breadcrumb/parm mixture if only doing 4 breasts, but if doing all 8 I think you'll need to time and a half the butter and egg mixtures (okay, you can't really half an egg, but you need more than one but less than two.) Anyway, I followed the recipe as stated except using italian bread crumbs (made own using 1 cup plain breadcrumbs plus: 1/2 teaspoon salt 1/2 teaspoon dried parsley flakes 1/2 teaspoon ground black pepper 1/2 teaspoon garlic powder 1/4 teaspoon onion powder 1/4 teaspoon dried oregano 1/4 teaspoon dried basil.) Overall it was great and pretty moist (cook only 35minutes next time.) Maybe a smidgeon too much garlic, but tasty! Also make sure not to pour too much butter over the top or the coating won't crisp up nicely.

Eh. These were fine, but a little dry. Maybe we used too many potatoes, but even after adding some more cream mixture (because it looked to dry before baking) these still weren't that great. We'll stick with our au gratin potato recipe in the future.

Zesty Slow Cooker Chicken Barbecue

Everyone in the family loved this- even my two youngest who are usually very anti-meat. Hubby followed this recipe, only using 4 defrosted chicken breasts instead of 6 frozen. Cooked on high for three hours, then shredded, and put back in juice in low until we were ready to eat. Delicious!

Apple Crisp II

This was absolutely delicious! My entire family raved about this and we are making it again even though we just had it a few days ago (we have a lot of apples to use from our tree:)) Anyway, we followed some other reviewers advice and made the following changes: -doubled the topping (next time will only time and a half it, as it was a little too much) -mixed apples up with the flour/cinnamon mixture -did not add the water to the apples -didn't really measure the apples...maybe only used 8cups? Just kept adding until all sugar mixture used up, then added 2 more apples to coated ones -used 1 tsp cinnamon and 1 tsp nutmeg -cut the butter into the topping with mixer instead of melting it Thanks for the great recipe!
