Coconut Curry Tofu

Loved this! I followed most of the directions. However, I drained, diced my tofu, and then placed it on a cookie sheet in a 175 degree oven for 30 minutes. I then browned it in a pan with coconut oil to give it a nice crispiness. I didn't add tofu into mixture until I added the bok choy. I used Curry Paste in place of curry powder. We also love spicy foods, so I added about 1/2 TB sriracha sauce. Served over Jasmine rice and it was delicious. We are not vegetarians but like to eat vegetarian a few times a week. This is a definite keeper recipe that we both loved. You can easily tweak it to your liking. Thank you very much for sharing! :O)

Cranberry Upside-Down Coffee Cake

This is one of the prettiest cakes! I made it for Thanksgiving this year. I followed the recipe exact, except, I changed the servings to 18, used an entire bag of cranberries, and I used my bundt cake pan. I was concerned after adding the sugar/butter mixture and the cranberries that I wouldn't have enough room. It worked perfectly! I generously greased the pan with shortening and removal was so easy. I will definitely be making this again! :O)

Delicious! I made these for the youth at our church when we packed our shoeboxes this year. They loved them and I didn't bring any home! The only substitution I made is I used all margarine in place of the shortening. I also refrigerated my dough for about 45 minutes and lined my cookie sheets with parchment paper. Perfect!!! I am definitely adding this to my recipe box! Thanks! 12-20-10 Made these again for our Youth Christmas cantata. They were once again all eaten by our small group and I made over 70. They looked so good with the holiday M&Ms, too! :O) Nov 2011 Once again I made these for our OCC shoebox packing party. They quickly disappeared!!

I have used this recipe for the last six years for Thanksgiving. It always gets such compliments. Why would anyone eat that nasty gel in a can when this is SO easy and tasty???

This recipe is amazing! I have used it for the last six years for Thanksgiving. I usually make 2 9x13 pans and it is all eaten. It reheats great and is SO cheesy!!!!

Awesome Sausage, Apple and Cranberry Stuffing

This is the best stuffing I have ever had! I have made it for the last six years for Thanksgiving. It is so much better than traditional stuffing. I don't stuff the bird with it. I put it in a lasagna pan and cover with foil for about an hour. Then I remove the foil and let it bake for about 30 minutes. It is even good reheated!

I first made these for a Sunday school celebration. We were discussing Hanukkah. Everyone loved them and I saved the recipe. I have made them for Christmas and other occassions since then. They are always devoured. I use the variation of apricot jam. They are just delicious!

Maple Icing

Yummy! This frosting is very easy and tastes delicious. After reading some reviews, I cut back to 3/4 tsp of vanilla and used 3/4 tsp maple flavoring. I have added this to my box and I will use it again!

Big Soft Ginger Cookies

These are just amazing! I am not a fan of gingerbread but the ginger is very subtle. After baking and cooling, I drizzled a vanilla glaze (from this site) over the top. This is such a great Christmas cookie! I plan on making them for another gathering.

Red Velvet Cookies

This cookies are amazing! I definitely recommend putting the dough in the refrigerator for about an hour before baking. (If not you will end up with red hands and a gooey mess!) Press them down for a more cookie-like feel instead of a "cakie." I topped them with a homemade cream cheese frosting and dark chocolate shavings. They were beautiful and delicious! I plan on making them again for another Christmas gathering.

Holiday Chicken Salad

Homemade Black Bean Veggie Burgers

These were suprisingly good! My hubby and I aren't vegetarians, we just like healthy and inexpensive meals. This recipe fits both those! We doubled and followed the recipe only making one change---more breadcrumbs. We made them the night before, refrigerated, and cooked the next day. They held together wonderfully and created a sense of eating a hamburger. We topped with Pepperjack cheese, lettuce, and chipotle mayo. We will definitely use this often.

Delicious Ham and Potato Soup
