Spicy Bean Salsa

Love this but I did not use the italian dressing. I used the juice of one lime,1.5 tsp of cumin, and 2 cloves fresh garlic. Yumm! I also added this mix into corn tortillas and put a little crumbled manchego cheese rolled it up and microwaved it for about 20 seconds. Dinner!

Italian Sausage Soup

I liked this recipe but like using Chicken Broth instead of beef broth. I did add a little more garlic and a little sage for some additional flavor.

Chicken Enchiladas V

I had to get rid of some left over grilled chicken so I chose this recipe. I had very little time so I didn't read the reviews or make any dramatic changes, other than I added 2 tsp. cumin and used monterey jack cheese because that's what I had on hand. Also, to reduce on my dishes and kitchen clean up I heated the butter, onion, etc. in a bowl in the microwave. My kids loved it and it was so simple! I will use this again and again.

Jalapeno Popper Spread

I used 3 fresh jalapenos instead of canned. I took it to a party with fritos and Triscuits. When I went back to get the dish, it had been scraped clean! I highly recommend this if you have to take an appetizer or snack to a party.

Slow Cooker Chicken Taco Soup

Very good and very easy. I did, however, felt it needed a little cumin and garlic so I added 1.5 tsp of each. I omitted the beer and used 14 oz. can of chicken broth.

Clone of a Cinnabon

I had to make these two times. the first batch weren't as good as the second. The second batch I added 1 more tsp. of yeast as it didn't seem to proof well enough with just 2 1/2. I didn't use a bread machine; just regular flour and yeast. I proofed it and then put the dough in a warming dwarer at 100 degrees to proof. The dough rose beautifully! I also added a small box of vanilla pudding (that's the secret to my grandma's cinnamon rolls which I have made for years. I ended up putting 1/2 T. more cinnamon in the filling mix as well for a more cinnamon than sugar flavor. Also, added 1/2 c. powdered sugar to the icing to make it a little sweeter. This isn't a low-fat recipe but let's be honest, if you are looking for low fat, cinnamon rolls aren't the recipe to make!! :)

Spinach Stuffed Chicken Breasts

I started by marinading the chicken breasts in a greek dressing for a couple of hours. I didn't butterfly the breasts, but created a pocket in which to place the stuffing. This way it bakes into the chicken and doesn't ooze out the sides. To the filling, I added 1/4 tsp. fresh ground pepper, chopped sun-dried tomatoes, added a bit more feta and about 1 T. of chopped greek oregano to the rest of the ingredients but omitted the bacon all together. I baked them in the oven as I didn't want the grill flavor. At the end of the cooking cycle, I placed a couple teaspoons of chopped greek olives then let them sit in the oven for about 5 more minutes.

Asian Coleslaw

This is good but it does have a very strong flavor. I would suggest cutting back on the soy sauce. It's good but you can't eat a lot of it at any one time. I would suggest cutting the recipe in half for 4 small-medium serving sizes.

Thai Cucumber Salad

This was just like the restaurant's peanut cucumber salad that I always order. The only difference is that they also serve it with some shredded carrots and chopped red onion which I added. It's more sweet then spicy so if you want a little more zing then sweet, I suggest that you add an extra jalapeno and cut the sugar by 1/3. I will definitely make this again.

Very quick and easy to prepare and very good flavor. The only changes I made were to use just unsalted sweet cream butter and no shortening and I upped the vanilla extract to 2 tsps. My kids loved them so they served their purpose!

Cashew Crusted Chicken

Delicious, Easy and Fast! However, for a little bit more flavor I added the following ingredients 3/4 tsp. garlic powder, 3/4 tsp. onion powder, 1 tsp. ground red pepper, 1 tsp. fresh black pepper, and I increased the curry powder by 1 tsp. I baked the chicken as directed but then the last 2 -3 minutes I broiled it on low to make the crust a little crunchy on top and light golden brown. I served this with steamed asparagus and roll! YUM!

Sweet and Spicy Green Beans

I made these for a side dish for Christmas dinner. EVERYONE, even the kids, loved these! I used a lb. of frozen green beans,added a little more Thai Garlic Chili Paste then what it called for and used a Lite Soy Sauce to cut down on the sodium but other than that I followed the recipe exactly. I will be making this again and again! Thanks for such an easy and wonderful veggie recipe that my whole family enjoyed!

Pumpkin Chocolate Chip Cookies III

These were very good but I did add 1 tsp. nutmeg, 1 tsp. cloves and 1 more tsp. of cinnamon. Plus I added 1/2 cup more pumpkin. These were good the first day but were fantastic the second day!! I would definitely recommend making these a day or two ahead.

Grilled Asian Chicken

This was a good and easy recipe but a little too sweet for my taste. If I made this again I would add a small amount of chile paste and a little less honey. Remember the sugar from the honey will make it burn a littl eon the outside so be careful and watch it.

Hot Fudge Ice Cream Bar Dessert

Excellent! I made this with chocolate chip ice cream sandwiches then on the first layer I did the PB and chocolate then a topping of whipped cream and slightly chopped mini resee's cups. On the second layer I spread caramel syrup and marshmallow cream with heath bar bits. Then on the very top whipped cream and chocolate shavings. This was high in fat, high in calories and high in flavor!!! I will make this agaiin and again.

Cedar Planked Salmon

This was absolutely delicious. I marinated the salmon for 3 hours. I made it exactly as the recipe stated. I paired it with a wild green salad with balsamic vinegarette dressing and a mushroom risoto. I served a white "citrusy" (not "sweet")wine. If I could remember what the name of the wine was I would include it, unfortunately I can't remember. :( This dinner was so well received that there was a very little table talk! :) Everyone was stuffing their face and didn't want to take the time to talk. I know they say you can reuse cedar planks but I have not yet been able to do that as mine always catch on fire...even after soaking them overnight!!

Self-Filled Cupcakes I

Very good recipe. I placed 1 heaping Tbls. of cream in the center of the cupcake and then dropped a dollop of batter over the top. I smoothed the batter over top of the filling with the back of the spoon. I think I will put a little more sugar in the cream cheese filling next time as I would like it to be a little more sweet.

Flank Steak with Horseradish Sauce

The flank steak was good and tender but didn't have an enourmous amount of flavor. The sauce is excellent though. I would serve this sauce on any type of red meat.
