Spicy Bean Salsa
Love this but I did not use the italian dressing. I used the juice of one lime,1.5 tsp of cumin, and 2 cloves fresh garlic. Yumm! I also added this mix into corn tortillas and put a little crumbled manchego cheese rolled it up and microwaved it for about 20 seconds. Dinner!

Italian Sausage Soup
I liked this recipe but like using Chicken Broth instead of beef broth. I did add a little more garlic and a little sage for some additional flavor.

Chicken Enchiladas V
I had to get rid of some left over grilled chicken so I chose this recipe. I had very little time so I didn't read the reviews or make any dramatic changes, other than I added 2 tsp. cumin and used monterey jack cheese because that's what I had on hand. Also, to reduce on my dishes and kitchen clean up I heated the butter, onion, etc. in a bowl in the microwave. My kids loved it and it was so simple! I will use this again and again.
