Slow Cooker Latin Chicken

I cut the spices in half (I was leary to serve it to my kids full strength), but I thought it tasted bland as a result. I think maybe I just don't really care for the cumin and allspice. I do like the combination of the rest of the ingredients though, so I will make it again, maybe just with garlic powder, salt, pepper and Italian seasoning.

Mozzarella and Tomato Appetizer Tray

Everyone I have fed this to has loved it! It's standard fare for family get togethers at the request of many! I also add quartered artichoke hearts when I have them on hand. Thanks for a great recipe!

Mom's Italian Beef Barley Soup

I dredged the meat in flour and browned it in evoo (extra virgin olive oil) before putting it in the crockpot. This makes stew instead of soup! You can also add veggies into the crockpot to make it more of a complete meal. Use a nice fresh loaf of italian bread to mop up the sauce. This way you can avoid the embarassment of licking the bowl! Excellent dish; thanks for the recipe!

Apricot Chicken I

The Cranberry Sauce Chicken (very similar to this recipe) used to be my family's favorite, but now they like it better with the apricot! It was absolutely delicious! Thanks for the recipe!

Braised Balsamic Chicken

I thought this was wonderful! The tomatoes I used were with "zesty jalapenos" which added a little zip! I also added a small can of sliced mushrooms and served with whole wheat thin spaghetti. It was a hit with the whole family. Thanks for a great recipe!

Easy Seafood Fettucini

I made this recipe exactly and used 1 lb of shrimp and 2 cups of small bay scallops. Some of us sprinkled on some grated Parmesan cheese. I give this recipe 5 Stars because it is the closest you'll get to an "Alfredo" Sauce without all the cream. My health conscious husband remarked that it looked fattening. I was so happy to tell him it really wasn't too bad! Next time I will try cutting the butter in half and see if it makes a big difference in the taste. I will also add more seafood because all the shrimp went and there's none left in the leftovers. (Not that much left over anyway!) Thanks for an excellent recipe! I can't wait to make it for my Dad!
