Chicken or Turkey Tetrazzini Deluxe

Reviewed: Dec. 24, 2014
This is a very good recipe. It makes A LOT so be prepared for leftovers. I used pene pasta and it was good. It barely fit into my largest 9x13 casserole dish. Reheats well.

Barbecue Bacon Cheeseburger Meatloaf

Reviewed: Oct. 31, 2014
Pretty tasty but missing something. I added some browned onions and used real bacon and sliced american cheese but this recipe still seems to be lacking something I can't put my finger on... VERY greasy but it was good. The kids and my husband ate it but no one asked for seconds. May make it again.

Spicy Spaghetti Squash

Reviewed: May 20, 2013
The red pepper flakes overwhelm this recipe. I only put in 1 tsp. while increasing the rest of the ingredients and it was still too spicy for us. I guess, in fairness, it is called SPICY spaghetti squash but for me, it didn't balance well, even with less red pepper... Also, this would have been better if after the squash is almost done to mix with the other ingredients, lay it out almost flat, add some Parmesan cheese and stick it under the broiler for a few minutes to crisp. I will not be making this again but if you like spaghetti squash and HOT sauce, go for it.

Pineapple Upside-Down Cake V

Reviewed: Jan. 27, 2013
Made this with a couple slight changes. I used a bundt pan, greased with butter. Poured mix of melted butter and coconut oil in the bottom (about 1 Tbsp of oil and 4 butter). Then I used 1 1/2 the called for amount of dark brown sugar, sprinkled it on the melted mixture. Then the coconut followed with the pineapple slices and cherries. Next I put a layer of the cake mix, a layer of the crushed pineapple then the rest of the cake mix. As others recommended, I used the butter golden cake mix and used pineapple juice instead of water. I baked it according to the cake mixes instructions for bundt pan. It came out WONDERFUL and looked beautiful. No cracking or worrying about layering. Try to serve this cake within an hour or so after taking it out of the over. The crunchy topping is the best and it just isn't as good the next day.

Banana Crumb Muffins

Reviewed: Feb. 22, 2011
YUM! Added a teaspoon of vanilla as recommended by other reviewers. I also doubled the topping for more crunchy goodness. Great muffins with or without walnuts. I brought these to work and everyone loved them!

Coconut Macaroons III

Perfect recipe as is. Baked for closer to 20 minutes for a little more toasted flavor. They still came out nice and gooey on the inside. Delicious!

Very tasty. Used butter since I didn't have margarine. Served over egg noodles. Nothing spectacular but it was pretty good.

Creamy Chicken and Wild Rice Soup

Reviewed: Nov. 2, 2010
Since I modified this quite a bit, this review is based on the following changes: Used a crock pot - cooked chicken breasts with water and broth for about 3 hours on high until chicken was tender enough to shred. Prepared the cream as directed but used 1/2 cup flour and fat free 1/2 and 1/2 in place of heavy cream. Sauteed about 1 cup of carrots, 5 stalks celery, 1/2 Spanish onion and 1 1/2 Tbsp crushed garlic in olive oil until vegetables were soft. Added vegetables and cream mixture. Didn't seem very thick and the pepper was overwhelming so I tamed it by adding about 8oz. reduced fat cream cheese. Cooked on high for about another hour. What a nice flavor and SO creamy and rich! Highly recommend trying this. Pretty good overall. Maybe nest time I will try as submitted and not with the crock.

Sugar Cookie Glaze

Reviewed: Nov. 2, 2010
This is VERY thin. I added a bunch of extra sugar to thicken it a little and it still is extremely thin. I also added a touch of vanilla since the flavor is kind of boring. Went well with the best sugar cookie recipe on this site. I did really like how it dried nice and hard so stacking the cookies worked nicely.

The Best Rolled Sugar Cookies

Reviewed: Nov. 2, 2010
These are great cookies. I added extra flour and a little vanilla. I topped with the sugar cookie glaze from this site. Refrigerate at least TWO hours or more or the dough will get too soft and make it hard to roll.

Easy Beef Wellington

Reviewed: Oct. 7, 2010
The end result was very tasty but it was difficult to put it together. Also, the pastry didn't cook as evenly as I would have liked though that is probably due to my inexperience making things like this. It was delicious and the sauce was great too. I will probably try it again some time.

Baked Ziti II

Reviewed: Oct. 7, 2010
Excellent recipe. Since other reviewers said it was a bit bland, I added a little garlic powder, oregano and dried basil to the mix. Since I was making a large batch for a party, I ended up using three different kinds of jarred sauce (Francesco Rinaldi Garden Combo, original and tomato/garlic/onion flavors). The results were perfect. A little extra mozzarella on top too made it really good. YUMMY!!!

Italian Sausage, Peppers, and Onions

Reviewed: Oct. 7, 2010
YUM YUM YUM! I used three kinds of onions - Spanish, yellow and red. Also added a 1/2 can of diced tomatoes, a little extra garlic and about 1/2 cup of jarred pasta sauce since I like a little tomato. I let it simmer for about an hour or longer and it was delicious! Leftovers were awesome too!

Seven Layer Taco Dip

Reviewed: Jul. 26, 2008
Awesome recipe! This is SOOOO good and looks great for a party if you put it in a trifle dish as pictured. To make it a little lower in fat I used low-fat cream cheese, sour cream and cracker barrel 2% cheddar cheese. It was wonderful and everyone loved it! The leftovers the next day were great too.
