Marzetti® Hawaiian Slaw

This was delicious! I would have never thought to add pineapple, raisins, and coconut to coleslaw. I made it with already chopped pkg of coleslaw and then added the other ingredients. Very good recipe.

Wiener Schnitzel

I used pork instead of veal as many other people did. I should say my husband did, he made it. I served German potato salad and applesauce with it. Next time will try some lemon on it as suggested by others. Also will make or buy some dark German bread to go with the meal. Good recipe.

Key Lime Pie VII

If you like "real" key lime pie this is a great recipe. The 2 cans of sweetened condensed milk that I bought did not make exactly 3 cups so I cut down on the key lime juice just a little. I used bottled key lime juice and it worked just fine in the recipe. "Real" key lime pie should not be green as it is in some restaurants. If it is they have added some food coloring. The pie should be a very light yellow. I put cool whip on top and it was delicious. The cool whip should be put on after it has cooled and been refrigerated for several hours or overnight. This is a very easy recipe and maybe next time will use fresh key limes that I can get right here in Laredo Tx.

Indian-Style Rice with Cashews, Raisins and Turmeric

If you are looking for a good Indian rice , you have found it. I had never made Indian rice before so wanted to try a recipe that wouldn't be too spicey. This was delicious and very creamy with the addition of the coconut milk. I had plenty left over for 2 more meals . One I added chicken and hope to use the other left over rice with another Indian vegetable recipe. This is really delicious , if you haven't tried basmati rice before here is your chance.

The Original All-Bran® Muffins

This is a good basic recipe for bran muffins. I added some applesauce and 1/2 cup dried cranberries for a little extra zing. There are many different ingredients you can add for your own personal taste; dried fruit, raisins,nuts, different flavors of applesauce etc to make them a little more tastey.

Sour Cream Banana Coffee Cake

This recipe for coffee cake is very good. I made it exactly as written except added more mashed banana and that made it very moist. The sour cream added a little zest to it. I baked it in a 8x8 pan and added some shredded coconut on top. very good recipe.

Irish Ginger Snaps

These are very good cookies but I did make a few changes. I read some of the other reviews that suggested using butter instead of shortning. I used 1/2 cup or 1 stick of softened butter. I only used 1/2 t of cloves and 1 1/2 t of ginger since I prefer ginger. Also used 1/2 cup of white sugar and 1/2 cup of brown sugar and added about 1/4 cup of molasses for extra taste. I didn't roll the cookies in a ball, just dropped by teaspoon and baked for about 14 minutes. Must have been an error in the baking time given. Since I didn't roll them in sugar I drizzled thin icing when they were still warm. tip-- use parchment paper on the cookie pan and there is no clean up needed. Good recipe.

Sweet Irish Bread

I was looking for a Irish soda bread recipe but saw this one and tried it first. I made it exactly as written except used lite sour cream. This bread is delicious and will be good toasted with a little butter on it. I think next time I will use less sugar , maybe 3/4 cup instead of the whole cup. This is a must for anyone that loves warm bread right out of the oven and would be great with a cup of hot tea. Very tasty , very moist.....5 stars Peggy Ann

Crustless Spinach Quiche

This is a wonderful recipe for quiche. I tried it because it is crustless and it was very good and easy to make. I also have tried using frozen chopped broccoli and a colby jack/cheddar shredded cheese mixture. Was very good and will make again. Thanks! Peggy Ann

Mock Mincemeat Pie

I am surprised to see that so few people have reviewed or tried this recipe. I love mincemeat pie and this recipe is far superior to anything you could buy in a store or by using jarred mincemeat. I made exactly as written and it came out perfect. The smell of the apples and cinnamon and cloves cooking is out of this world. The orange juice and apple cider add a lot to the pie. Made it at Christmas and again in Feb. Wonderful recipe- 5 stars Peggy Ann

Italian Breaded Pork Chops

I simplified this recipe by making the pork chops in my George Foreman grill. For 2 pork chops I I used 1 egg and 1/2 cup Italian bread crumbs and 1/4 cup parmesan cheese. Spray the grill lightly with Pam and cook for about 8 min. Tasted pretty good.

Date Oat Muffins

After reading the reviews I decided to make a few changes when I made them. I wanted them to be moist so used 2 regular eggs. I did not have the dates so I shredded some carrots ,used 1/2 cup . To make a little more healthy I used 1/2 whole wheat flour and 1/2 reg. flour. Also used 1 cup skim milk, and 1/2 cup apllesauce instead of the melted butter. Added 1/4 cup pecans & 1/2 teaspoon cinnamon for extra flavor. The batter was a little thin so added an extra 1/3 cup oatmeal. it's not cold anymore so don't make oatmeal in the morning and this recipe is a good way to get oatmeal into your diet. This recipe turned out good and moist almost like a carrot cake muffin. Will try with dates next time.

Banana Oat Muffins

These muffins were very moist and good. I changed the recipe just a little to make them more heart healthy. I used 1/3 cup applesauce instead of the oil,reduced sugar to 1/4 cup and used 1% milk. I added 1/2 teaspoon cinnamon and 2oz. pkg of chopped walnuts for extra flavor. These are good warm with a little butter and some honey drizzled on them.

Simple Oven Fries

Thermos Bottle Stew

I had the pleasure of sending the picture when I made this the other day. What a great recipe. I cut the whole recipe in half and it turned out just fine. I cooked longer that it suggested. Simmered it for about 2 hours. Thought the name of the stew was unique. MY husband and I really liked it. Would be very good on a cold night for supper.

This was the first time I tried this recipe. Very good and easy to make. I hadn't tasted artichoke hearts before so it was a different taste for me. I didn't have the fresh parsley so used dried. Glad I tried it.

Tres Leches (Milk Cake)

I made this cake yesterday and it turned out very well. I live on the Mexican border so I have had this cake many times in restaurants and at parties. I did make a few changes to lesson the calorie and fat content and it still tasted authentic. First I would tell you to read the directions carefully. The cake has 3 parts ; batter,filling and topping. The first 6 ingredients make the batter. Be sure to put only one cup of sugar in the batter not 2. The next 3 ingredients make the 3 milk mixture for the filling hence the name three milk cake. I chose not to use whole milk but used 1% and used only 1 cup along with the other 2 milks. I made the cake in a 9x13 pan not a round pan as seen in the picture. The cake was a little flat but that is ok because as you add the 3 milk mixture it expands . After the cake was done I pierced the cake many times with a fork , all over the cake. You want to make a lot of holes for the milk to saturate the cake. After you pour the milk on , you want to cover with foil and refrigerate for several hours. I chose to use cool whip as the topping instead of the whipping cream-sugar mixture. That cut down on a lot of the calories and was very good. After I covered the saturated cake with cool whip I covered with foil again and refrigerated for another several hours. You want it to be very cold when you serve it. I know this has been long but wanted to share my changes and suggestions on making this cake. Good luck!

Hawaiian Fish with Pineapple

I have been trying to incorporate more fish into my diet so tried this recipe. I used less lemon juice and milk and still turned out pretty moist. I liked the thyme and basil combination.

Amish Meatloaf

I was looking for a good meatloaf recipe and tried this one. I halved the ketchup mixture that goes on top and it turned out fine. Was moist and delicious. Tasted very homemade. Will make again. I froze the leftovers in sections and was very good 2nd time around.

Taco Soup VI

This taco soup is delicious. I didn't have the vegetable juice cocktail on hand so I used tomato sauce instead. Also I didn't add the full amount of taco seasoning as I like my soup on the milder side. My husband loved it and added some pequin peppers to his as we live in Texas and they grow in our backyard. Will definatly make again.
