Smothered Filet Mignon

Hasselback Potatoes

I loved these. I used the tip of some other folks and put a wooden spoon (handle side) on either side of the potato as I was slicing. I used a pastry brush with the butter. I think that helped me get in between the slices a little bit. I love potatoes and loved this preparation. The taste was delightful - rather subtle, but yummy nonetheless. Made this with sesame green beans and filet mignon for Father's Day today and they were a hit. My mother thought the potatoes were beautiful. Offered to start paying me to cook for them. :) I will probably make these again and not change a thing. YUM.

Chocolate Pancakes

The recipe as written was not edible to me. There is no baking soda so they did not raise at all and the batter was so thin... The first one was like a crepe with this big blobs of chocolate chips sticking out. I added some more flour and some baking soda and they were a little bit better. But I would have been better off satisfying my craving with regular pancakes with chocolate chips thrown in.

Minestrone Soup I

I'd rate this a 3.5 I think. It's a good, hearty, filling soup. But I don't know why it says to cook everything so long. I only simmered the beans, pots, etc, for about 30 minutes and the potatoes were getting mushy and once I put the pasta in I only cooked it for another 15 minutes until the pasta was done. I used more of nearly all the ingredients (onion, celery, carrot, garlic, cabbage, tom paste, pots), and enjoyed the taste well enough. Like some other reviewers I tossed a couple bay leaves in and I added more mixed italian seasoning. I also used a whole wheat rotini instead of elbow mac and did not add any salt but I added a lil fresh ground pepper and used olive oil instead of butter. If I make this again I will probably use the italian tomatoes. Not sure yet if I will make this again. If you make it, I would suggest not cooking it as long as the recipe indicates.

Nutty Pumpkin Waffles

YUM! Try it, you'll like it! I loved this recipe! My breakfast companion enjoyed it as well. I forgot to add the nuts and am not sure we missed them. Like some other readers, I subbed 1/2 whole wheat flour, just to up the fiber, make it a lil healthier, and only did half the salt. The glaze was delicious. The waffles are pretty tasty by themselves, but if you really like pumpkin, then you have to do the glaze too because it brings the pumpkinness to a whole new level! :) YUM. Will be making these again.

Tuna And Bean Salad

Loved it. Have made it twice - once as lunch for the week at work. I doubled the recipe and took it to the office with some pita and spinach. I steamed fresh green beans that time and overcooked them a little, but that's my bad, not the recipe's. The second time I made it as lunch for guests and they loved it too. I think I used frozen green beans that time. It doesn't hold together quite good enough to make an easy sandwich in my opinion, but my friend ate it with a fork, like a regular salad and we all enjoyed it. My BF who doesn't typically care for tuna loves this.

Spinach and Potato Frittata

LOVED it! I have made it twice already. You can definitely add more spinach, more green onion and more garlic if you like. I used O'Brien potatoes from the freezer to save some time. This was a delicious breakfast when I had guests though we all agreed it could use a little meat in it. The second time I made it, I made it for my bf who has high cholesterol but I didn't want to lose out on yummy Sunday morning breakfast - so I used egg beaters and veggie breakfast sausage. I used four patties of morningstar, chopped up, which was a little too much, but it was also delish! YUM. Try it, you'll like it. :)

Summer Zucchini Stew

I did make some changes to this - more sausage, more potato, more zucchini, chicken broth instead of just water and some tomato paste. I was trying for a stovetop version of a similar recipe I made in the crockpot. I thought this cooked too long as the vegetables were pretty much mush by the time I ate it. I probably won't make it again - I'll probably go back to my crock pot recipe.

Grain and Nut Whole Wheat Pancakes

These tasted good, but could be better. I made a half batch, but still with a whole egg. I also used pecans instead of walnuts, just my own preference. The batter ended up being pretty thin so I added more whole wheat flour. I also ended up accidentally forgetting the sugar. The resulting pancakes tasted good, though they were pretty dry. They were also pretty good sized, hefty pancakes. My half batch made six pancakes and my bf and I each only ate one with some butter and syrup (he used a LOT) and sliced strawberries on top. He has high cholesterol and I'm trying to help him eat more fiber. These had a good taste and I will probably try them again, though I may well use the yogurt and applesauce that some other reviewers have used. Mine were not tender and moist as someone else said - I kept the heat pretty low but maybe I cooked too long? I waited to flip until it was pretty firm. Anyway, I will try these again.

Pumpkin Turkey Chili

I love this chili! VERY tasty, easy to make. I will agree with other reviewers -this recipe is a nice base, to tweak as you like. I used ground beef not turkey, cuz it was cheaper. I bought the tubs of pre-chopped red onion, and green and red bell pepper from the grocery store, cuz I hate chopping veggies. I also added a can of drained / rinsed black beans, which I enjoyed quite a lot. Like other reviewers I felt it was pretty thick and probably ended up adding about a cup of water. I also added 2 T of chili powder and will use more next time. I didn't even taste the pumpkin especially, it just helped give it that nice thick stew/chili consistency. And I don't know what the reviewer who said it was too sweet is referring to, unless they used pie filling, instead of straight pumpkin puree. LOVE this chili and will definitely be making it again. A nice fresh veggie taste, while still being a hearty cold weather soup. YUM. UPDATE: Nov 2, 2008 - this is one of my favorite recipes. I made it for a soup potluck at work recently and got rave reviews. I always add way more chili powder than is called for, just for my own taste. LOVE THIS RECIPE! LOVE IT! :)
