Tender Pan-Fried Chicken Breasts

Reviewed: Oct. 13, 2012
We really enjoyed this recipe and have added it into our regular cooking rotation. The chicken had a great flavor from all the seasonings, and the meat itself was very juicy with a nice, crispy coating. We baked it on a rack over a baking sheet to help prevent the sogginess other reviewers complained about - it helped a lot. I have a hard time keeping chicken breasts from getting dried out, but these were so moist. To go with it, I made a milk-based chicken gravy with the browned bits in the pan and poured it over the chicken and mashed potatoes. Delicious and very, very easy.

Amish White Bread

Reviewed: Feb. 3, 2011
OMG this bread is WRONG. I want to marry it and have a million of its babies. It's not often I make something exactly according to the recipe (I usually follow tips from other reviewers), but I followed this one exactly, and holy heck, I cannot stop eating it. And neither can my husband. Somebody go ahead and tape this bread to my rear end because that is exactly where it is going, and I don't even care because it is THAT GOOD.

Buttercream Icing

Reviewed: Nov. 8, 2010
This recipe is great and so easy! I followed other reviewers recommendations and used all butter instead of shortening - fabulous. Otherwise, I prepared it exactly as written, and it was great. I don't know what's up with those other reviewers, using less sugar because it's "too sweet." That's crazy talk! It's icing, for crying out loud. It's SUPPOSED to be sweet. And yes, it is very, very sweet, but it's wonderful. Made icing my cupcakes super easy. This was my first try at making my own icing, and I'm so glad to have found a winner from the get-go. I will never buy canned icing again!

Tomato-Cream Sauce for Pasta

Reviewed: May 1, 2010
Great recipe! Super easy. I followed the advice of other reviews and upped the amount of garlic. I didn't have any Italian diced tomatoes, so I just used plain diced, and it was still delish! I also doubled the sauce and tossed it with a box of spaghetti and some grilled chicken. It made plenty for my family of four, with some leftovers (although everyone was scraping their plates, so there wasn't as much left over as I was hoping for!). Oh, and for the love, PLEASE don't use skim milk or any other kind of milk or half and half in this recipe - the heavy cream is what makes it so yummy. I tried subbing whole milk, and I was sorely disappointed.

Oatmeal Pancakes II

Reviewed: Apr. 30, 2010
This is a great recipe! I make it for my kids all the time. I don't use a food processor, though - I blend it up in my blender (a VitaMix) until the oatmeal is totally smooth. The other changes I make are to use whole wheat flour, and add 1/8 cup ground flax seed and 1/4 tsp cinnamon. Oh, and I often half the milk with apple juice to add some extra sweetness. These pancakes are surprisingly light and fluffy, and once my family got past the fact that "they're brown," they really enjoyed them. I double this recipe every time I make it and freeze the extras for quick before-school breakfasts.
