Quinoa Pilaf With Mushrooms

I did not care for this recipe. We used hen of the woods mushrooms from our yard that are always delicious, and we ended up picking them out of the pilaf and leaving the rest. I've tried to find ways to use quinoa that we like; this just isn't to our taste.

Mom's Texas Hash

This was a good base, but of course I tweaked it. I didn't puree the tomatoes and used a variety that also had green chiles. I added about half a cup of tomato sauce, a couple cloves of minced garlic, some frozen roasted corn kernels, a diced bell pepper, a dash of liquid smoke, some cumin and oregano, half a teaspoon of white sugar, a sprinkle of cayenne pepper and some red pepper flakes. The resulting flavor was vaguely "southwest barbecue", with more depth and meatiness.

Fudge Brownies I

Modified this, but the recipe was a great base to start from. Used 4oz of Godiva 60% bittersweet baking chocolate, 2 T cocoa powder, and 2 eggs, baked in a 9x9 glass pan. It took almost an hour for the center to finish, but the results were amazing.

Cajun Seafood Pasta

I cut the red pepper and salt in half, and instead of green onion, I added a sauteed yellow onion and sauteed bell pepper. With the alterations to suit our tastes, this is an instant favorite.

Vegetarian Chickpea Sandwich Filling

Tasty! I used the base proportions and changed it up a little. I'm no fan of raw onion, so I sauteed onion with some garlic and let the mixture cool. Put the chick peas, onion/garlic, and dill in the food processor with a little lemon juice, a squeeze of spicy mustard, and a tablespoon of tartar sauce instead of plain mustard. Added a little salt and black pepper, whirred it all together for about 10 seconds, and it was done. Let the flavors blend in the fridge for a few hours and then served in whole wheat pitas with some lettuce. A dinner that even my confirmed carnivore husband enjoyed!

Meadowwood Tapioca Pudding
