Anna's Chocolate Chip Cookies

Delicious. Because I didn't have butter and used margarine, these didn't spread out as much as they would have with the butter, and so took a little longer to bake at 375. This is my new favorite chocolate chip cookie recipe.

Animal Crackers

What a neat recipe. I just made them and can't wait for littlest great grandson to try them tomorrow. He's not a sweet eater, preferring "animal crackers", so I'm hoping these are a hit with him. I used the small cutter shown, not an animal shape, but the same size as the crackers and goldfish he loves. If he likes them I'll take the suggestion of one of the other reviewers and look for some play dough molds in animal shapes. Thinking of making some for myself for snacking, adding some parmesan cheese to the dough. Thanks for posting.

Cranberry Hootycreeks

OMG, so delicious! Didn't use any nuts because of allergies in family, and only had chocolate chips so used those instead of white chocolate, but the combination of the rest of the ingredients is so good that I immediately made a second batch to freeze and add to the Christmas dessert table. Great idea to give gifts jars of the ingredients along with the recipe. Thanks for sharing.

Spinach and Mushroom Frittata

So easy, and delicious. I varied it a bit, using what I had in the house. Instead of ricotta I added garden salad cottage cheese, and in place of the scallions, chopped onion. I also added diced green pepper. A wonderful recipe to have on hand for a quick meal. Thanks for posting it.

Cranberry Orange Bread

This is a coarse coffee bread. I found the flavor to be fine as written, only change I made was to increase orange juice to a scant cup. I used dried cranberries, and did not take the time to presoak them. I think I've become used to some of the newer coffee breads which are moister, and at first was surprised, almost thinking this bread was on the dry side. After my second piece slathered with cream cheese, I decided it's not - it's a "coffee bread" in the old fashioned sense of the term.

Oatmeal Peanut Butter Chocolate Bars

Rating before eating, because like lovestohost posted, could not spread the choc chips. What a disappointment. I have another recipe that is cooked at a 400 oven, where the chips are easily immediately spread them. I even took these out, turned oven up, covered dish with foil and put back in another 5 minutes. No luck. But, I guess we should have had a clue looking at the picture given - those choc chips are not melted and spread either. Waiting for them to cool to try. Used what was left of caramel sauce, mixed with peanut butter and a little confec sugar and milk to get consistency I wanted to dribble over top.

Kielbasa and Cabbage

I did not care for this dish at all. Surprised, because separately, I love cabbage and chicken kielbasa. Following the directions, I found it to be too greasy. It may just be a matter of personal taste, but I will continue to serve my cabbage separately, with butter and vinegar.

Honeyed Pork Chops

Followed recipe exactly except to bake for an extra 15 minutes. Made a really thick boneless chop, and it needed the extra cooking time. I did slice an onion and lay the chop on top of that - yum, delicious with. Served with some kind of stir fry Japanese noodles I had, drizzling a little of the leftover sauce on them, and adding the chop/onion slices on top. Applesauce rounded out the meal. Have a bit left that will just fill the bill for my lunch tomorrow. Sauce is a keeper for future reference.

Peanut Butter Brownies I

Followed recipe and the suggestion of adding baking cocoa. Used 1/4 cup cocoa and 1/4 cup plus 2 tbsp. flour. Cut back the baking powder to 1/2 tsp., and added to the mix 1/2 pkg. of milk chocolate toffee bits. Found the brownies needed a longer period of time baking - 35 minutes. Came out a lovely chocolate colored brownie, very moist and rich. Next time I will follow suggestion on toffee bits pkg of baking the brownies, taking out of oven, then sprinkling bits on top, covering with foil, and leaving the foil on until they are completely cooled. Think this will provide a toffee crunch rather than melting them right in the batter.

Baking Powder Biscuits

Delicious. I followed other reviewer's suggestions and only added 1 tbsp. sugar, and patted the dough instead of rolling it. I only got 8 biscuits. This would be a wonderful biscuit to use in a strawberry shortcake.

Good, moist. Next time I will add a little butter and sprinkled sugar to the top. I took another reviewer's suggestion and made two loaves, perfect for a one person household, one to enjoy now and one to freeze for later.

Mother's Applesauce Muffins

Absolutely delicious! I halved the recipe and the only change I made was the addition of a mixture of sugar, cinnamon, and chopped nuts sprinkled on the tops. Baked for 20 minutes. Definitely a "keeper".

Blueberry Crisp II

I wasn't sure I'd like this, and hoped I wasn't wasting this summer's frozen fresh blueberries. It was so quick and easy tho, I had to give it a try for tonight's supper. It's delicious. Miracle Whip has always taken the place of mayonnaise in my house, and because I probably only had 3 cups of berries, I cut down on the M.W. using a scant 1/2 cup, but leaving the other ingredients the same. I left mine in the oven for 50 minutes. I hope noone asks for the recipe, because I know they will be turned off when I tell them how much M.W. is in it. I'll definitely make it again tho.

Blueberry Coffee Cake II

This has got to be the best blueberry coffee cake ever. Loved it. Made it exactly as written, except baked it for only 40 minutes. Puffed up, and was moist and scrumptious. Brought some of it over to welcome new neighbors.

Coconut Orange Cupcakes

Just made the cupcakes omitting the mandarin orange segments, the white chocolate, and the topping. The topping, because it sounded too sweet to me. They would be delicious plain as I baked with a cuppa. However, I did take some Temptee whipped cream cheese, and frosted a couple and then dunked them in the coconut. Now, that's to my liking! Plan to freeze them plain and then cream cheese "frost" as needed. Also, recalculated the recipe to make 12, and because of not adding the mandarins and choc chips, got 10, not 12 out of it. All in all, it's a keeper and is already in my recipe box. Morning after: I'm so glad I didn't frost these. As is, this morning, they are perfect consistency of a morning muffin.

Four Egg Yellow Cake

Have been looking for a home made yellow cake that didn't require cake flour. This recipe is delicious. I was hesitant to use 4 eggs since I buy large ones, but I did put the 4 in and feel that contributed to its success. The only change I made was to take another reviewer's suggestion to use only 2 1/2 tsps. baking powder, because 3 seemed too much. I also sifted the flour twice. I had prepared a tube pan, but on pouring the batter in, saw I was going to have way too much, so hurridly greased and floured the 9x13 dish recommended. Only problem I had was in releasing the cake from dish after it was baked Always slip a piece of wax paper on the bottom, but prepared this so at the last moment. that I skipped that step. Letting it cool 20 minutes, then cutting it in half, and using spatulas to slide under, I was able to lift each half out onto a rack to finish cooling. Thanks for sharing this recipe that is reminiscent of my mother's cakes when I was a kid. Adding a picture taken of cake made as a birthday cake with raspberry flavoring in the frosting and a layer of raspberry jam on top of middle layer of frosting - it was delicious.

Easy Meatloaf

This was absolutely delicious. I recalculated the servings down to 4 and made this tonight for my DIL and myself, with the following changes: I substituted Peppridge Farm Herb stuffing for bread crumbs, and pre-soaked the crumbs in the milk. Result was a moist delicious meatloaf. Have already added it as a permanent recipe to my recipe box.
