Curried Coconut Chicken

I have never made a curry dish, but w/ the great reviews decided to give it a shot. I used UNSWEETENED coconut cream (cream by mistake) but it came out perfect and creamy and i'd probably make that mistake again since it was so good. I also subbed out the normal sugar for coconut sugar, but think i 100% could have done w/out it all together. All tomato products I purchased were also no sugar added. and I drained the tomatoes. The flavors went so perfectly together and the leftovers the next day were even better. Will def be making this regularly.

Avocado, Tomato and Mango Salsa

Perfect mango salsa! Just the right ratio of the mango to tomato and avocado. I paired this w/ pan fried Opah and a lemon butter cream sauce in an effort to replicate a restaurant dish i once had and this salsa was right on!!

Fish Tacos

TACOS/FISH: UPDATE: Made these a second time and noticed the flour I had used was "better for bread" flour. Well there was my problem! So I went and got a proper all purpose flour and these were just perfect perfect perfect! I cooked mine till they are a little darker than needed because I like it extra crispy. These were a total hit with everyone I made them for!! ORIGINAL: Made recipe exactly as described. At first I tasted a fish taco right after i took it out, w/out any taco fixins. I was kind of bummed cuz it seemed almost doughy. However, once put in a taco w/ sauce and cabbage, etc, it was PERFECT. It's not a fish n chips type batter, but its awesome and I'll make it again. SAUCE: Made exactly as shown. I made that first and let it sit in the fridge to let the flavors merge and it was SO good. Used it the next day for grilled fish tacos as well. I'll prob make this sauce for other stuff too, i loved it!

Zesty Slow Cooker Chicken Barbecue

this recipe was awesome! I made this for a party and it was a huuuuge hit and so easy! Using a good BBQ sauce is def key, I used Jack Daniels. Will def be making again!

Tiramisu Layer Cake

if you like tiramisu, then i think you will love this. its extremely easy to make and it tastes just like some ive had in restaurants. i followed the recipe 100% and really wouldnt change a thing. its prob not the kind of thing you make alllll the time, but perfect at holiday time or parties too. whoever said their frosting was sour probably had bad cream im guessing!

so simple and such a hit. its a real crowd pleaser for sure. its def important to let it cool so u can cut it, but i liked microwaving each piece for about 10 seconds to really make it all melty again, but not much longer than that or youll have a big mess on your hands. anyway, ill def be making these again. i did double the crust only because im a crust person and i used milk chocolate since i like that better as well.

Mouse's Macaroni and Cheese

i made this the night before thanksgiving and was a little nervous how it would reheat since there is so much real cheese i was nervous. well it was a huuuuuuge hit and the cheese stayed nice and creamy as intended (im pretty sure the velveeta was key). i just threw it back in the oven for another 30 min or so. i tripled the recipe and used gruyere cheese and mozzarella instead of american simply because i like a stronger cheese and thought it would add a bit of flavor. it was just perfect and a huge hit. anyone who complains about too much cheese is crazy! its not like youre making this to be healthy, its unhealthy as it gets but SO GOOD. also, for the crust, i used equal parts panko crumbs and grated parm cheese. this will def be my staple pot luck item. **UPDATE: made this again served it right away...i did see what some were saying about it being soupy, but it really wasn't a problem for me, but i understand why some people do prefer to add more noodles. Next time i might add a bit more noodles if im serving it same day, or i could just let it cool off for a few minutes to thicken, but for a pot luck and reheating i think as is is just perfect.

Yummy Sweet Potato Casserole

now im no southerner, so this may very well be a perfect recipe for what this dish should taste like, but i def thought it was too sweet. I baked the potato like others suggested and other than that followed the recipe exactly. If i make again, ill prob cut down on that. i made this for a thanksgiving potluck but it wasnt a toootal hit. i think it depends on the crowd tho, must have misread them! Overall, though, it did taste good, even if a bit too sweet!

Red Velvet Cupcakes

I honestly have no idea what "real" red velvet tastes like, but these were great as far as im concerned. I did use canned frosting, but the cake part was great. This will prob be my standard recipe for red velvet.

Ground Beef Enchiladas

So I did like other people and lined the bottom enchilada sauce, i used green sauce cuz i like it better. I went w/out the jalapeno just because i didnt want too much spice, but everything else I did as the recipe said. Ive never made enchiladas before and these were super simple and got great reviews at the potluck i brought them to. I'll def make them again!

Salmon with Dill

I'm new to salmon making, so i liked the simplicity of this recipe. Like others have said, it seems like its a LOT of spices and might be too much, but its really not. This was easy and didn't take very many ingredients, most of which I had on hand which is a plus. It was SO good. I added a squeeze of lemon to mine, which really complimented the dill flavor but no tartar sauce. It was perfect as is. Great recipe!

Maple Salmon

This was my first time ever cooking fish, so I was a bit nervous. This recipe was extremely easy for a novice like myself, and it tasted amazing. I loved the sweetness from the maple, but it wasnt too sweet at all. This will def be my staple salmon recipe!

Red Velvet Cake III

Great recipe for the red velvet part...i just used the standard cream cheese frosting though. I did like most others and used 4tbs cocoa and 2 oz red food coloring. Could have used maybe a tiny bit more cocoa, but im not complaining. They were fluffy, moist, and red! Ill definitely be making these in the future. I did cupcakes and this recipe made exactly 24.

Smooth Sweet Tea

Very good tea! I love sweet tea and wanted some for thanksgiving, but the place i get it was closed. So i searched here and found this recipe and it was exactly what i was looking for! I used 1 cup of sugar and 5 cups of water. I suggest like someone else said to add a few cups of water and taste it since some like it sweeter than others. A+!
