Marvelous Stuffed Mushrooms

Reviewed: Jan. 11, 2012
This is an excellent recipe. We made them as a part of our Christmas buffet. They are fast, and not too hard, though you have to be careful when you're taking the mushroom stems out of the caps. We've tried them both with and without the whipping cream. Delicious either way. They're also good cold, after they've been in the refrigerator overnight. Thank you for this recipe. It is absolutely, awesomely brilliant.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Jul. 30, 2011
This is our standard for roast chicken now. It is delicious! I enjoy that I can do all the work when my energy levels are still up, and I don't have to be working hard around dinner time. I usually brine the chicken overnight in salt water and season it right before roasting. I have a low rack that fits my roasting pan, and it works beautifully. Sometimes I'll throw red potatoes and carrots in the pan. The drippings make an excellent gravy thickened in a roux. We use the extra chicken for many things, and always make stock out of the bones--a delicious stock. Thanks for a great recipe, a definite keeper!

Guacamole

This is an awesome recipe! We made it for our Christmas buffet. I didn't have a lime so I used two tablespoons of bottled lime juice instead. Thanks for this great recipe.

Pumpkin Gingerbread

Reviewed: Nov. 9, 2010
This is fantastic! I already have a go-to pumpkin bread recipe, and most others don't measure up, but this...this is wonderful! Moist, fragrant, evoking that I'm-eight-again Christmas feeling. I followed the recipe pretty closely, but we can't use all-purpose flour because my daughter has a barley allergy (read the packaging), so we used our own home-ground wheat. She is also allergic to corn, so we can't use baking powder (contains corn starch), so we replaced it with half as much cream of tartar. Also, I only put two cups of sugar in, and didn't have enough white, so used 1/2 cup of brown--it was plenty sweet for us. Finally, because I didn't want to wait the whole hour, I used giant muffin tins and made twelve big-uns, baked at 325 for 30 minutes to absolute dreamy perfection. Can you see me drooling?

Orzo with Parmesan and Basil

Reviewed: Aug. 23, 2010
Very simple. Very good. We did not have enough stock so used water. You will need to check and add water as you cook, because it will stick to the pan and set off the smoke alarm. Don't say I didn't warn you. ;) I used olive oil instead of butter. Okay, okay, I added a smidge of butter. I threw in some minced garlic as well. Dried herbs work fine if that's what you have. I served this with the spinach and parmesan chicken from this site. Thanks for a great recipe!

Spinach Chicken Parmesan

Reviewed: Aug. 23, 2010
Excellent and tender! Followed the directions EXCEPT I pounded the chicken first, used bread crumbs with the parm, doubled the sauce, and added the spinach halfway through the cooking. Served over basil and parmesan orzo also from this site. Seriously, people, all six of my children ate their chicken AND their spinach without one word of complaint. Yum! Thanks for a great recipe, KM Smokey!

Easy Tuna Casserole

Reviewed: Mar. 31, 2010
My daughter had this for her birthday lunch today. She really loved it, and the rest of the family seemed to enjoy it as well. I thought it a bit dry, and will add a little milk next time. We did not have French's onions, so we used crushed Ritz crackers instead. Otherwise, we pretty much followed the recipe...although we didn't measure anything. ;) Thanks for a quick and easy recipe.

Baked Salmon with Herbs

Reviewed: Jan. 26, 2010
Love this! We have to bake it for less time or it is dried out. This topping would go great on tilapia, orange roughy, etc.

Poppy Seed Muffins

Reviewed: Jan. 18, 2010
Yum, yum, and again yum! I had to alter it slightly because we didn't have the right ingredients and because we don't like things too sweet. We used about 1 3/4 cups sugar--perfect. We used only 1/2 cup of oil and about the same amount of plain yogurt. It was PERFECT! We baked them for less time because our oven runs hot. The glaze is tasty but we left it on the side for anyone to add as they wished, since it added a lot of sweetness. Thank you for this recipe! I know you all dislike it when someone rates a recipe and then changes is, but isn't it nice to know you can alter it to fit what you have on hand and it's not only edible, but delicious?! We made 36.

Belle's Hamburger Buns

Reviewed: Jan. 18, 2010
This made excellent, light and fluffy hamburger rolls. We are veyr excited about this recipe! I didn't really change it, although I used honey instead of sugar, just because that's what we do. (Who needs a better reason than that!) Also, some of our flour was homeground wheat, and they were still light and fluffy! We used them with BBQ pulled pork, very saucy, and they held up very well. This morning we made bread out of the recipe. Also fab! I used a breadmaker for this recipe. I did check it now and again, and it required a bit more flour, probably due to inaccurate measuring on my part. Thank you infinitely for this recipe! Delicious! Five stars!

Foolproof Rib Roast

What can I say? It worked beautifully! Of course, everyone adjusts the seasonings to their own family's preference, so there's no point in telling you what to do to please MY family. Don't be afraid to experiment with the seasonings to delight your own crew.

Key Lime Pie VII

Reviewed: Jul. 12, 2009
I am not a lime pie fan, but I truly love this pie. As others did, we juiced 20 key limes in a garlic press and used 2 cans of condensed milk. We skipped the zest for creaminess' sake. We also used a sugar free homemade graham cracker crust. (Just leave the sugar out of a regular graham cracker crust recipe--you won't notice, and if you do, then you eat WAY too much sugar!) Phenomenal! Really! We've been talking about this pie for months! (I know, we need a life, but it is really THAT good!)

Steak And Onions

Reviewed: Feb. 23, 2009
The flavors for this recipe were very good. It was a quick recipe and very simple. Since there were seven of us eating and we had to stretch the steaks, we sliced them and prepared them on a griddle instead of broiling whole steaks. We used the same seasonings, however, and the result was wonderful. Thank you for sharing.

Fudge Brownies I

Reviewed: Feb. 10, 2009
Thanks for the recipe! We made this tonight and it never quite formed properly. It was very crumbly, almost like crushed Oreos. I have absolutely no idea why this happened. That only thought I have is that we are at 2600 altitude...but really! Anyway, it tasted delicious! We sprinkled chunks and crumbles over vanilla ice cream and was that ever tasty! I will use this recipe again for that purpose! With my luck, next time it will turn out right, now that I don't want it to. Ha! Thanks again for the sundae topper!

Delicious Black Bean Burritos

Reviewed: Jan. 15, 2009
This was delicious, but, of course, we didn't stick with the recipe. Because we were feeding seven people, we added a solid pound of ground beef which we browned first, and then proceeded more or less as indicated in the recipe. While a couple of the family memebrs had it as burritos, most made taco salads with corn chips, lettuce, avocado, etc. It was very good, and my bean-phobic husband said, "Hey, did you notice I ate my beans and didn't say anything?" We all have a bit of the two-year-old in us! Thanks for a delicious launching pad!

Beefy Spanish Rice

Reviewed: Jan. 2, 2008
I don't know why, since I never even had rice at home as a child, but THIS is DEFINITELY comfort food! I've made it a few times and have varied it each time to suit the ingredients we have in the house. I've added 6 ounces tomato paste with extra water, diced tomatoes, left out the green pepper, added more water, left out the ketchup, etc., and it always turns out perfectly! Everyone eats it (hubby, 5dc: 11, 9, 7, 4, 2). One thing I do consistently is to start cooking the rice as soon as I begin browning the beef. After it's tender (15 minutes) I stir it in and serve. We've never had a problem with crunchy rice. Tonight we're having this with a nice big "make-your-own" salad bar, cornbread, and a fruit salad. I think we'll wear our PJs and eat it in front of a roaring fire--that's what you do with the truly good comfort food!
