Banana Muffins I

This is a wonderful recipe! I modified it a bit to make it a tad healthier. I used 1/4c white flour, 1/2c whole wheat flour, 1/4c wheat bran, 1/2 scoop of vanilla flavored whey protein powder, 1 tablespoon baking powder, 1/2 tsp baking soda, 1/4 tsp salt, 3 mashed bananas, 1/4c splenda for baking, 1/4c nonfat vanilla yogurt, 1/4c egg substitute, 1/2 tsp vanilla and 1 tsp cinnamon. Nutrition info per muffin: 82 calories, 0.5g fat, 18 carbs, 2g fiber and 3g protein. Once cooled I sealed them in a plastic bag overnight, and I had no trouble peeling them from the muffin liners. Very moist and healthy!

Chocolate Cornstarch Pudding

yummy! it is silly how when you grow up having jello instant pudding, you forget that you can just make it yourself. it tastes better and is really easy. i used Hershey's Special Dark cocoa, 1% milk and omitted the butter and vanilla. a nice light dessert.

Jay's Signature Pizza Crust

oh, my goodness what a wonderful pizza crust. i am not a bread baker so the fact of kneading the flour into the dough made me a bit nervous, but this is so easy to make. i baked it on a pizza stone and it yielded the most delicious crispy outside and soft inside.

Exquisite Pizza Sauce

delicious flavor. i skipped the anchovy paste and the peppers for personal preference. made this to top Jay's Signature Pizza Crust along with Lime Chicken (from Lime Chicken Soft Taco recipe here on AR) and feta cheese.

Old Fashioned Potato Salad

i have always had a ridiculous fear of making potato salad because of the thin balance between undercooked potatoes and overcooked potatoes. however, i tackled my fear head on with this recipe and it turned out fantastic! i did omit the celery and added dill weed and paprika. this will be my go to potato salad from now on. thanks!

Zucchini Patties

i was pleasantly surprised by how yummy these were. i used potato flakes in place of the flour and decreased the cheeses a bit for personal preference. will definitely make again. i just sprayed the skillet with Pam in place of the vegetable oil to make it a bit more healthy.

FABULOUS! wow, these are awesome. i used 1/2 cup white and 1/2 cup wheat flour, next time i may try all wheat. i baked them for 10 minutes.

this is a fantastic simple marinade! i did double the honey and lime juice, but i would add a touch more lime juice next time. i also added a few shakes of lemon pepper. these flavors blend so well together.

Steakhouse Wheat Bread for the Bread Machine

YUM! i decided to replace the honey with molasses and used coffee in place of the water. this produced a nice small loaf, perfect for two people. i loved this bread and i will make again.

Quinoa and Black Beans

LOVE this! i usually make this with couscous, but had some quinoa on hand. i added chicken to bump up the protein and a splash of lime juice. I left out the cilantro since i think it tastes like soap. super dish!

wow! i never thought i would find a chocolate chip cookie recipe that would rival the one i have been using for years. i may go so far as to say this may become my recipe of choice! the only change i made was to increase the oven temp to 350 and i baked them for 15 minutes. YUM!
