Quick and Almost-Professional Buttercream Icing

awesome frosting. easy to decorate with. the only changes i made was that i melted the butter and added 2/3 cup of cocoa to make the frosting a chocolate flavor.

Banana Muffins I

This is a wonderful recipe! I modified it a bit to make it a tad healthier. I used 1/4c white flour, 1/2c whole wheat flour, 1/4c wheat bran, 1/2 scoop of vanilla flavored whey protein powder, 1 tablespoon baking powder, 1/2 tsp baking soda, 1/4 tsp salt, 3 mashed bananas, 1/4c splenda for baking, 1/4c nonfat vanilla yogurt, 1/4c egg substitute, 1/2 tsp vanilla and 1 tsp cinnamon. Nutrition info per muffin: 82 calories, 0.5g fat, 18 carbs, 2g fiber and 3g protein. Once cooled I sealed them in a plastic bag overnight, and I had no trouble peeling them from the muffin liners. Very moist and healthy!

Spinach and Potato Frittata

this was so easy to make and tasty. i added twice as much spinach than what the recipe called for and a few less potatos. i also put it in a 400 degree oven for about 8 minutes after it was on the burner for 6. it was also very good the next day!

Milky Way® Cupcake Icing

Couldn't stop myself from licking the spoon! Milky Ways are my favorite candy bar so I was excited to try this. Made this to top Marianne's Sweet Vanilla Cupcakes and it was perfect. I let the icing cool a bit before I spread it on the cupcakes with a knife. Very tasty.

Curried Chicken Tea Sandwiches

YUMMY! i substitued 1/2 cup light mayo and 1/4 cup of fat free yogurt, cherry craisins, and toasted almonds. i served this on mini phyllo shells and it was wonderful. elegant looking and easy.

this is absolutely delicious. my main purpose in making this was to try out my new jar of cardamom (i had never tried it before, but i am intrigued by this spice). the spices in this recipe blend together so well. nice presentation also.

Herbed Greek Roasted Potatoes with Feta Cheese

HOLY SMOKES! these potatoes are fabulous -- perhaps the best i have ever made. i put these in a cast iron skillet on the grill, covered with foil, and let them bake for 40 minutes. the feta adds such a nice subtle flavor to these. this will be my go to potato recipe from now on. thanks so much cyndi.

this is a nice yummy treat. next time i will cut back the white sugar to 1/2 cup and cut back on the butter just a tad. i also added just a touch of vanilla. thanks for the recipe.

White Bean 'n' Ham Soup

Buffalo Chicken Burgers with Blue Cheese Dressing

Since ground chicken is so expensive I made my own by thawing 4 BLSL chicken breasts and cutting them into 1 inch cubes. I added a handful of the chicken cubes to the food processor and hit the chop button for about 5 seconds or so, scooped out the ground chicken into a bowl and continued until I had all the chicken ground. Be careful not to grind too long as you can easily ruin the chicken. I then proceeded with the recipe and it yielded 4 patties. Easy recipe and would be great to make ahead and freeze. Thanks for sharing.

Chocolate Truffle Cheesecake

DEVINE! i can't even begin to say how good this was. perfectly creamy. i used about 30 oreos because, well, i like oreos. i made it in a 10 inch springform pan, baked for 65 minutes then turned off the oven and let cool in oven for 1 hour. no cracks. i put in fridge overnight, then topped with the Chocolate Ganache from this site. Took out of fridge 2 hours before serving. Absolutley wonderful!!

Shredded Chicken Tacos

I used boneless skinless chicken breasts and regular chili powder. I used flour tortillas since that is what I had but I would have preferred corn. It has a nice flavor with just enough heat to it.

Meatball Nirvana

Finally got around to making these. YUM! I went LTH style and used dried onions instead of fresh, cut back the red pepper a tad and omitted the hot pepper sauce, 'cuz I'm a little sensitive to spicy stuff. I was very pleased with the texture and taste. I made this along with Best Marinara Sauce and served over hot capellini. Thanks for a great meatball recipe, LTH.
