Banana Muffins I

This is a wonderful recipe! I modified it a bit to make it a tad healthier. I used 1/4c white flour, 1/2c whole wheat flour, 1/4c wheat bran, 1/2 scoop of vanilla flavored whey protein powder, 1 tablespoon baking powder, 1/2 tsp baking soda, 1/4 tsp salt, 3 mashed bananas, 1/4c splenda for baking, 1/4c nonfat vanilla yogurt, 1/4c egg substitute, 1/2 tsp vanilla and 1 tsp cinnamon. Nutrition info per muffin: 82 calories, 0.5g fat, 18 carbs, 2g fiber and 3g protein. Once cooled I sealed them in a plastic bag overnight, and I had no trouble peeling them from the muffin liners. Very moist and healthy!

Raspberry and Almond Shortbread Thumbprints

These are nice sweet treats. Mine did crack a little, but they still looked good. I added 1/4c more flour and baked at 340 for 20 minutes. Very pretty and tasty.

Cheesy Ham and Hash Brown Casserole

Chantal's New York Cheesecake

since this was my first attempt at making a cheesecake, i followed the recipe exaclty. i didn't use a water bath, nor did i put foil around the pan. the cheesecahe did crack quite a bit, but i figured who care since i covered it with cherry pie filling anyway. it tasted wonderful and i will definitely make again.

Clone of a Cinnabon

I made these for Easter breakfast and they were absolutely wonderful! I recommend using all of the brown sugar/cinnamon mixture--it looks like a lot, but just layer it on. Once the rolls were done baking, i tipped them over and allowed the gooey stuff in the pan to drip back on the rolls. So yummy!

Spinach and Potato Frittata

this was so easy to make and tasty. i added twice as much spinach than what the recipe called for and a few less potatos. i also put it in a 400 degree oven for about 8 minutes after it was on the burner for 6. it was also very good the next day!

Sarge's EZ Pulled Pork BBQ

this was so good, but all i did was put the pork shoulder in the crock pot with 1/2 bottle of bbq sauce and let it go for 8 hours. i drained off that juice, "pulled the pork," added the pork back to the crock pot, added some more sauce and warmed it for another 30 minutes. easy and very good.

YUMMY! i substitued 1/2 cup light mayo and 1/4 cup of fat free yogurt, cherry craisins, and toasted almonds. i served this on mini phyllo shells and it was wonderful. elegant looking and easy.

Whole Wheat Beer Bread

I used Samuel Adams Cherry-Wheat beer. Did not like the dense texture and the bitterness of the beer was too strong. May try again with a lighter beer.

Jo's Rosemary Bread

so delicious! i replaced the water with milk. i let the bread machine do the mixing, then rolled into 10 balls, placed in a cake pan and baked at 350 for 30 minutes. i brushed olive oil over top once out of the oven....a keeper :o)
