Country Pumpkin Muffins

a dense muffin with great flavor. some modifications: used only 1/2 cup of white sugar and 1/2 cup of brown sugar (next time would use 1 cup of white and 1/2 cup of brown) 1.5 cups whole wheat pastry flour and 1.5 cups white flour, 1/4 cup veg oil and 1/2 cup applesauce, and 1/8 cup ground flax seed. these modification were made due to limited ingredients (should have looked in the pantry before i started this recipe). but overall these came our great, but i would have liked them a bit sweeter. oh, and i added a scoop of protein powder because i add protein powder to most of my muffins. an awesome breakfast muffin.

Slow Cooker Chicken Taco Soup

LOVE this! i substituted chicken broth for the beer and a can of mild enchilada sauce for the second can of diced tomatoes because that is what i had on hand. i also added a small can of tomato paste as i wanted a little thicker soup base. delicious!

Cream Cheese Marbled Chocolate Brownie

a creamy chocolate dream. i only had a 8x8 pan which caused the brownies to be a tad thicker than i like. if you can, use the 9x9 pan. i also subbed heavy cream for the milk because i needed to use it up. when performing the marble technique, do not be afraid to glob the cream cheese mixture on top of the chocolate mixture and spoon the chocolate overtop the cream cheese. i tended to swirl the two, which didn't quite achieve the expected marble effect all the way through the brownie. excellent taste -- not too sweet!

Gobble Up Granola Snacks

oh, these are delightful. the crispy rice adds a nice light crunch. i used 2/3 cup brown sugar, 1/4 cup corn syrup, 1/2 cup honey, a healthy glob of creamy peanut butter, (1/4 cup wheat germ and 1/8 cup ground flax seed -- just because), 1/2 cup chopped almonds, 1 cup cranberries, and a handful of chocolate chips. i pressed hard in a coated pan with hands -- no crumbles. wonderful!

delicious. this is a rather dense muffin. i added a few more blueberries and sprinkled the tops with cinnamon and sugar before baking. i greased the muffin tins, but since this is such a dense muffin, i recommend using paper liners as it was hard to get the muffin out intact.
